“Nagiging matubig po yogurt na inorder ko, sira na po ba siya?”
I get this question a lot and it is definitely a cause of concern but worry not, that’s actually liquid whey from the yogurt and it’s completely normal :D . The tip I often tell my clients is to just stir it with the yogurt or discard it but what I usually just do is to flatten the yogurt as best as I can just like on the second pic. Yogurt is considered as thixotropic which means its thickness decreases when stirred or shaken then slowly rebuilds its original thick structure when left undisturbed. We can talk more about the science behind it but that is for another time but now you know :)

This is what our Carabao Plain Yogurt looks like. No added thickeners, sugar or any additives just your Fresh Carabao Milk from Elyu and mother yogurt. This will be used as a starter for your Creamy Plain Yogurt at .ph . When you get to taste our yogurt, let it be known that it was locally sourced from our fellow hardworking farmers.

My first time to turn raw carabao milk into yogurt and look at this beauty 😍 A bit tedious process compared to pasteurised but I have successfully done it. This will be used as our starter for this week.

Greek Style and Greek Yogurt. Yes, there is a difference.

While both variants are not inherently bad, it is important to know what you are consuming which is why when clients ask for “greek” we verify if it’s greek or greek style because we offer both variants 🙂

I’ve been a little quiet these past few days. I spent some time in Sagada with friends, and here are a few moments I wanted to share.

What stood out to me was how much the yogurt scene has grown since my last visit. But more than that, I realized how my reasons for coming here have changed. It’s no longer just about the places, it’s about reconnecting with my Sagadanian roots.

That curiosity led me to wonder about something simple: yogurt. It’s said to have been here since the 1990s, originally for foreign travelers. And somehow, I find myself thinking about its possible ties to Vietnamese yogurt ,how traditions and techniques travel, adapt, and settle into new places.
