Hot Mom's Delicacies are originally made from Legaspi City, Albay. It is a family business established since 2018. The canning process is used for food preservation. It involves heating them to a temperature that destroys micro-organism that cause food to spoil. During this process, air is driven out of the jar and as it cools down, a vacuum seal is formed. This prevents air from getting back into the product and avoid contamination. The process also neutralizes the acidity of the food and enhances shelf life up to 1 year.
