Kimchi was found to lower fasting blood glucose (fasting blood sugar), total glucose, total cholesterol and low density lipoprotein (bad cholesterol). It was also documented that the fasting blood sugar levels were significantly lower in the high kimchi-intake group as compared to the low kimchi-intake group. Thus, greater consumption of kimchi leads to better fasting blood sugar levels and total cholesterol in young healthy adults. (Choi et. al., 2013).
