Growing up in the Middle East, authentic shawarma wasn't just fast food; it was part of daily life. The smell of the toasted bread, the crunch of the pickles, the fries inside the wrap, and above all, that sharp, fluffy, pure garlic toum.

When I came back home here to the Philippines, I spent years looking for that taste. Every time I bought "shawarma," I kept getting sweet mayo, cabbage, and cucumber slices. It was good food, but it wasn't shawarma. I couldn't find that authentic taste anywhere around here.
