Pinakbet tagalog
A dish where bitter melon, okra, string beans, eggplant and squash are sautéed together with some flavourings like pork or shrimps. This time I used smoked fish. I added fermented shrimp to add more flavor. I love my mom's ilocana version of pakbet using bagoong, broiled bangus and lots of tomatoes and sweet potato instead of squash.

Tips on how to make a crispy and tasty lechon kawali
*Simmer the pork until half cooked with salt, garlic, onion, black pepper, bay leaf and seasonings (optional)
*When the pork already half cooked separate the meat from the broth freeze for future use
*let the meat to dry well or pat dry with paper towel or you may put it inside the fridge for more than an hour
*when ready to fry rub the pork with some rock salt
* make sure that the oil is hot enough before frying
*turn on the other side when the color is already golden brown
*let the meat to cool before slicing or chopping
* serve with pickled veggies or fruit or with your favourite condiments
