Homemade Chicken Oil 🐔

Ingredients:

500g chicken skin and fat trimmings
1 tsp salt
1 tsp whole peppercorns
4-5 cloves garlic, crushed
2 bay leaves
1 stalk lemongrass, bruised
½ cup water
1-2 tbsp annatto seeds

Instructions:

1. Place the chicken skin and fat trimmings in a pan. Add the salt, whole peppercorns, crushed garlic, bay leaves, lemongrass, and water.

2. Cover and cook over low to medium-low heat. Allow the chicken skin to slowly render its fat. Stir occasionally to prevent the skin from sticking or burning.

3. Continue cooking until most of the fat has rendered and the chicken skin becomes crispy.

4. Remove the chicken skin, garlic, peppercorns, bay leaves, and lemongrass from the pan.

5. Add the annatto seeds to the hot chicken oil. Let them infuse for 1-2 minutes, or until the oil develops a beautiful orange-red color. Be careful not to burn the seeds.

6. Turn off the heat and strain the oil through a fine-mesh strainer to remove the annatto seeds and any remaining solids.

7. Let the chicken oil cool completely before transferring it to a clean, dry container. Store in the refrigerator.

Use your homemade chicken oil for:

Basting chicken while grilling
Sautéing garlic, onions, and vegetables
Fried rice
Chicken inasal
Marinades and sauces
Drizzling over grilled or roasted chicken

Tip: Don’t throw away the crispy rendered chicken skin! Season it with a little salt and enjoy it as a crispy snack or topping. 😋
