Good question!

It's just nine ingredients.. We're not going to spill our secrets, but we pick the best of local produce and our preferred brand of Korean sun-dried red pepper powder, anchovy sauce, and dashima.

As a fermented food, our kimchi doesn't need any preservatives and gets even better over time.

This is Gwangjang Market in Seoul. If you watched the Netflix series Street Food: Asia, you may be familiar with this stall.

When I was trying to perfect my kimchi recipe, I only had one goal: replicate the best kimchi I enjoyed there.

The happiness I felt when I tasted and smelled the first batch using the recipe I have now, when the aroma that came out as soon as the kimchi started sautéing in the pan took me right back to Korea, I knew it was the one.

More than an income source, the heart of my small business is to bring a piece of Seoul to everyone.

Each batch is meticulously made by hand - no shortcuts - the right ratio of pickled vegetables and brine. Fresh, tangy, sweet, salty, perfect as a side dish and an ingredient in a variety of dishes.
