In Bicol, it turns rich and creamy with gata. In parts of the Visayas, adobong puti keeps it bright and simple with vinegar, garlic, and salt. In Batangas and Cavite, adobong dilaw gets its golden color from luyang dilaw, adding an earthy warmth to every bite.
