Watermelon ice cream
INGREDIENTS:
625ml (2 1/2 cups) fresh watermelon juice
100g (1/2 cup) sugar
20g (3 tbsp) cornstarch
150g (1 cup) watermelon pieces - finely chopped
Salt
250ml (1 cup) whipping cream - 1 cup, chilled
Red food color

Baby Mixed Green Salad

Ingredients

For the Salad:
4-6 cups mixed baby greens (a blend of spinach, arugula, Salanova (lettuce), and baby kale works well)
1 ripe mango, peeled, pitted, and cubed
1/2 cup candied walnuts or pili nuts (store-bought or homemade)
1/4 cup crumbled goat cheese

For the Vinaigrette:
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1 teaspoon honey (optional, to taste)
Salt and freshly ground black pepper to taste

Instructions
1. Combine the baby greens, mango, candied walnuts, and goat cheese in a bowl.
2. Whisk together the vinaigrette ingredients until well combined.
3. Dress the salad with the vinaigrette and serve.
