Last March 28, our Adobo Leveled Up class brought together food lovers ready to rediscover one of the countryโ€™s most iconic dishes. Guided by culinary masters Nancy Reyes, Jaja Andal, and Editha Singian, participants explored creative techniques and exciting variations that transformed familiar flavors into something new and unforgettable.

From the richness of Rodrigo's Roast Pork Belly to the crunch of Crispy Chicken Adobo Flakes, the depth of Batangas Calderobo, and the unique twist of Adobo Paella, each dish showcased just how versatile and dynamic adobo can be. The kitchen was filled with energy, curiosity, and the comforting aroma of a well-loved favorite reimagined in different ways.

To celebrate Filipino Food Month, we held a Philippine Heritage class led by Chef Giney Villar, CEC-ACF!

Chef Giney took us on a regional tour across the Philippines and demonstrated how to recreate these historical dishes:
Minanok na Talong - charred eggplant in coconut sauce)
Sinigang sa Mangga - a dish served to Magellan's troops back in 1521)
Adobo sa Dilaw - one of Marcela Agoncillo's specialty dishes)
Inabayan - a dessert salad from Batangas made from fresh buko and buko juice, toasted pinipig and sugar

A snack so good, pwede ding ulamin! Here's an easy and budget-friendly recipe from The Maya Kitchen's The Filipino Cookbook!

Let's make Sweet-Spicy Crispy Dilis!

INGREDIENTS:
1/4 kilo fresh dilis
3 pcs calamansi, juiced
1/4 cup MAYA All Purpose Flour
1 egg, beaten until fluffy
1/4 cup brown sugar
1 1/2 teaspoon fine salt
3 pieces siling labuyo, chopped
1/2 cup MAYA Cornstarch
Oil for deep frying
Spiced vinegar for dipping
*This recipe yields up to 6 servings.

LET'S MAKE IT!
Wash the fresh dilis under running water, then drain.
In a big bowl, combine the fresh dilis and calamansi juice, and let it marinate for 5 minutes.
Prep your pan or wok with oil for deep frying, set it to medium to medium-high heat.

While waiting, let's make the batter! In another bowl, combine the egg, brown sugar, salt, and sili.
Add the MAYA Cornstarch, and mix until smooth.

Back to the dilis!
Drain any remaining calamansi juice.
Dredge or coat the dilis evenly in MAYA All Purpose Flour.

Pour the batter over the dilis and mix until evenly coated.

If the oil is ready, drop in the dilis one by one, and fry until golden brown.
Set it aside on a paper towel to drain the excess oil.

Serve it while it's hot with a side of spiced vinegar, or even a cup of rice!

Last March 14, The Culinary Elite: The Not-So-Modern Filipino Pantry with FEATR brought together a community of passionate food lovers for a one-of-a-kind culinary experience at The Maya Kitchen. Featuring endemic ingredients from across the Philippines, the session highlighted how these can be used across a variety of dishes, from Kiping with Gamet Aioli to Kesong Puti Mousse Cups.

Last March 7, participants stepped into the world of Thai cuisine at our Signature Thai Dishes class, discovering the delicate balance of sweet, sour, salty, and spicy flavors that make each dish truly unforgettable. Guided by Chef Suwan Awa, the kitchen came alive with the fragrance of fresh herbs and spices as everyone prepared a lineup of Thai favorites.

From the refreshing Catfish Salad to the savory Cashew Chicken, the colorful Pineapple Fried Rice, and the sweet Water Chestnut in Coconut Milk, each dish brought a unique combination of flavors and textures. In Signature Thai Dishes, students joined Chef Suwan Awa for a hands-on class that explored the vibrant flavors and balance of Thai cuisine. From sweet and savory to tangy and aromatic, the session highlighted the essential techniques behind well-loved Thai favorites.

This featured dish is Pineapple Fried Rice, a colorful and fragrant dish that brings together rice, juicy pineapple, and savory ingredients in perfect harmony. Each bite delivered a balance of flavors that made it both comforting and refreshingly unique.
