I was walking around the streets of Danang Vietnam and I saw this yogurt shop. So yummy! They have honeycomb as a topping πŸ˜±πŸ˜‹β€. The yogurt itself is delicious, has the right amount of tartness/sourness and sugar which gives a refreshing feeling on the palate, no umay. Generous serving of fruits too! Though, Philippine Mangoes is still superior in terms of taste and texture. They said they also have brances in Ho Chi Minh and Hanoi so if ever you're in Vietnam, visit them! They have a wide selctions of toppings to choose from and some combo toppings menu too.

Today's merienda at home: frozen yogurt with cheesecake, pistachio sauce, fudge brownies and fresh mangoes. Yum

Congratulations to the DLSU Men's Basketball Team for being the Season 88 Champion!

Let's reflect on tonight's game and take a look at the player that piqued my attention the most on these last 2 games: Vhoris Marasigan. As we can remember, he took that crucial last shot during game 2 that could have won Lasalle the championship without the need for game 3. That shot almost got in but it missed, Lasalle lost to UP. But you know what, when players take these crucial last shots in basketball, it is a lot of responsibility and burden on their part because taking these crucial last shots takes a lot of courage on the part of the player because if it missed, surely, he knows he will get the blame, criticism, ridicule and get bullied for it, and he was indeed blamed, criticized, ridiculed and bullied for it by people online. I've read comments such as "masyado kasing pa hero", "libre sa ilalim dapat pinasa kay Pablo", "dapat pinasa kay Cortez hindi naman siya ang star player", "tanga", "bobo", etc. and more mean, insensitive comments from people who wasn't even on that high pressure situation during the final seconds of the game in the first place to give those kind of comments. If you watched the game, you know the best option was taking that shot which he did. But that night, fate had other plans.

But tonight we have witnessed again his courage. During the last 3 minutes of the 4th quarter with UP leading at 67-66, he took again that shot, if it missed he knows he will be again blamed, criticized, ridiculed and bullied for it, but despite of it he took the shot and it got in and Lasalle took the lead at 68-67. Then he took again a layup and a freethrow which further pushed Lasalle's lead to 71-67 making it harder for UP to catch up Lasalle's lead as well as relieving the pressure and the anxiety on his co-Lasalle players. This shows that you just need to BELIEVE, you just gotta have the FAITH. People will speak, criticize, ridicule, laugh at you, have that condescending know-it-all attitude and have their own opinions and it really happens and these kinds of people exist but despite of that you still need to BELIEVE and have FAITH, and then COURAGE will follow and people who always have the courage is the one who succeeds. As the famous saying goes: "You miss 100% of the shots you don't take" inaction guarantees failure, while taking a chance, even with the risk of missing or failing, opens the possibility of learning (if you missed or failed) and success. And this is what we have witnessed here on this finals game through Vhoris Marasigan and we can also apply this in our lives. It is such an inspiration and a moral booster! This, what we witnessed is the ANIMO spirit. And it makes me more proud to be a Lasallian. ANIMO LASALLE !!! πŸ’šπŸ€

Went to the shop today to make frozen yogurt in pints and look who I bumped into while parking my motorcycle at the Agno parking, one of the most clutch player I have ever seen in my life, king archer, the cool cub, idol lodz JACOB CORTEZ !!! Told him that if they become champion, I will treat the whole DLSU Men's Basketball Team free frozen yogurt hahaha.

Of all the foods I have tried to make, making ice cream has got to be the most complicated and scientific of them all. Moreover there were no recipes available in Youtube so I was on my own. I remember when I first made frozen yogurt from scratch, without the use of emulsifiers and stabilizers, the milkfat (butter) would separate and stick to the be**er of my soft serve ice cream machine similar to when you are making whipped cream and you overbeat it and it curdles and some of the milkfat (butter) sticks to the be**er, that's what happened at first and when I dispensed some from the ice cream machine it tasted bad, icy and watery since a lot of the milkfat went into the be**er with some bits of milkfats on the ice cream itself. But after numerous trial and error and experiments, I was able to find the taste, consistency, viscosity, mouthfeel, etc. that I want. I persevered! Why? Because I love frozen yogurt so much. When I first got to taste the frozen yogurt brand that rhymes with meow meow circa 2016, I was hooked! like a drug addict. I would always go to MOA to have it, I didn't really care if the parking was 50 Pesos, I need to have it πŸ˜‚ I also remembered that I have been pronouncing the brand wrong for 6 straight years, I would call it ilaw ilaw until 2022 and that's when a server corrected me and told me: Sir its: "meow meow". So, yeah. Then one random night while I was eating it, I wondered, how do they make this sh*t? Its so good! I should be able to make this at home and made a goal that I should be able to replicate the taste of this (my most favorite dessert πŸ˜‚) somehow, even not the same taste.

Not only was it the most complicated and scientific of all the foods that I have made, it was also the most expensive. Ice cream machines are very expensive kitchen equipments, more expensive than espresso machines. The ice cream machine (Carpigiani brand) that popular frozen yogurt brand I was talking about is using costs 1.2 Million if you buy it brand new. Crazy, right? You need ice cream machine to make ice cream. Why? Because you need to rapidly freeze the ice cream mix to create small ice crystals so it will have a smooth mouthfeel on the palate, you don't want it to have the big ice crystals because the mouthfeel will be similar to eating ice scramble. An ice cream machine uses a very big refrigeration system to be able to achieve that rapid freezing around its freezing cylinder walls. You also need to incorporate air and that is what the be**er inside the freezing cylinder does: to aerate the ice cream. Air is whipped into the ice cream during churning. Without air it would be a solid block of ice. Air is what makes ice cream scoopable! Also a scraper blade is attached in the be**er to shave the layer of frozen mix of the very cold freezing cylinder wall folding it into the center. You can't just put ice cream mix in the freezer and expect it to have the smooth consistency of a store bought ice cream, it will become ice candy. This is why when ice cream already melts and you refreeze it again, it becomes very hard to scoop. This is why it is important that you do not melt ice cream and refreeze it, you need to put it back in the freezer to retain its structure: the air bubbles formed by the ice cream machines back in the ice cream factory it was made. Ice cream is actually 30% to 65% air. It also adds volume!

Ice cream is a marvel of the combination of food science, food technology, chemistry and culinary arts. As simple as it looks, a lot of science, hardwork and labor is behind this sweet treat. Its such a beautiful creation. If you ask me, its a work of art.
