get to know our new matcha powder for the season ୭ ˚.

our matcha is from a city called yame in the fukouka prefecture in japan.

no, it's not from uji or shizouka, which makes it all the more different from other matcha powders that are commonly harvested and produced from these places.

the specific powder we decided on leans more toward the mellow side, meaning it packs less of a punch compared to umami-forward matchas that are typical of matcha sourced from uji.

it's more balanced and smooth, less bitter and vegetal. this may be due to the different cultivars mixed in together to create a consistent and well-rounded flavor profile.

it's also our first time serving matcha from this region, and we were pleasantly surprised by the taste and how it compared to the uji-based matchas that we used in our previous pop-ups.

we believe explaining the origin and nuances behind our matcha can help clear questions like: "why does it taste like this?" "why is this not that umami/bold/vegetal like other matchas i tried?" "why does this taste different from X or Y?"

and hopefully, when you take a sip of our matcha, you'll understand how not all matcha powders from japan taste the same and that there are a lot of factors and complexities that contribute to each of its unique flavor.

while we did say that yesterday would be our final year-end pop-up, a lot of you weren't able to buy a drink because we were sold out in 2 hours!

so, to compensate, we've decided to extend our schedule to today as well.
