Sourdough Chocolate Hazelnut Twist

How to mirror Nutella in bread? I added ground hazelnuts and cocoa powder into the dough then tucked a chocolate baton inside.

It smelled so good my son and I tried one piece straight out of the oven. The yummiest! 😊

Happy August Moon Festival (中秋節）

August Moon will happen 15th August on the lunar calendar, a little over a week from today. I am glad I finally had the time and courage to make 2 different kinds of mooncakes with 4 flavor variants for the first time.😄 The 2 striated spiral mooncakes are filled with black sesame and walnuts, and salted egg custard. The snow mooncakes have cream cheese with strawberry and Oreo.

It was a bit of a challenge working with the dough of the spiral pastry. I would have loved the layers to be more distinct but this was surely a new learning experience for me. I cannot wait to do more of these for next year's Mooncake Festival.

Shiopan with truffle butter

In all my trips to Japan, the shio pan (salt bread) is always a "must eat". But what I discovered was each bakery makes different shiopan in terms of crumb, texture and flavor. My search led me to . It was just one of those days when you felt a swirl is starting to get boring so you decided to laminate and do a braid. Now, with every bite, you get this wonderful sweet cinnamon. 🙂

Strawberry Shortcake, a simple cake for any tea party. It has chocolate diplomat in between 2 classic sponges and classic chantilly to finish it off. It came out very light with the strawberry giving it that tartness for balance.

A friend ordered this and this was the feedback, "Everybody liked it! They said it wasn’t too sweet & it was so nicely done. The strawberries were just the right ripeness."

My favorite thing to make when I have sourdough discard in my fridge. I threw in simple ingredients I can rummage from my vegetable crisper. Pizza has got to be one of the easiest things you can prepare on a lazy Sunday lunch.

I also did a test run of my Ooni Spiral mixer. It was a game changer. The dough came out so tender. I used recipe by King Arthur Baking Company but substituted 20% of the all purpose flour with whole grain flour for a nutty taste.

Sourdough shokupan with chocolate almond swirl.

I have done cinnamon walnut and black sesame iterations and today, I am doing chocolate almond for a friend who is not a fan of the other 2 flavors. I hope she will like it.

Tropical Bliss

Birthdays are special and with that comes a cake that is made just for you.

For this cake, I infused the sponge with sencha tea, filled in between layers with German coconut buttercream and mango pastry cream then wrapped it with yuzu buttercream. It was accented with the client's favorite colors, teal and rose blush.
