Here’s a delicious recipe for Chicken Barbecue sa Kawali, a Filipino-style dish that you can easily prepare in a pan.

Ingredients

- 3 pieces chicken leg quarters
- 1 cup Sprite or 7-Up
- 3 tablespoons calamansi juice (or lemon juice)
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 4 tablespoons ketchup
- ½ teaspoon pepper
- 6 cloves garlic, minced
- 1 tablespoon brown sugar
- 1 piece chili (optional, for spice)

Instructions

1. Prepare the Chicken:
- Make shallow slits all over the chicken leg quarters. This will help the marinade pe*****te the meat better.
2. Marinate:
- In a bowl, combine the Sprite or 7-Up, calamansi juice, soy sauce, oyster sauce, ketchup, pepper, minced garlic, brown sugar, and chili (if using).
- Place the chicken in the marinade, ensuring it is well-coated. Let it marinate for at least 1 hour (you can marinate it overnight for more flavor).
3. Cook the Chicken:
- Heat a kawali (or a large pan) over medium heat and add a little oil.
- Remove the chicken from the marinade (reserve the marinade for later) and sear the chicken skin-side down until it is browned.
- Flip the chicken to cook the other side until browned as well.
4. Simmer:
- Pour the reserved marinade over the chicken in the pan. Cover and let it simmer for 10 minutes.
- After 10 minutes, uncover the pan and flip the chicken, allowing it to simmer uncovered until the sauce reduces and thickens, causing the chicken to become slightly charred.
5. Serve:
- Once the sauce is mostly gone and the chicken has a nice glaze, remove it from the heat.
- Serve hot, ideally with a side of steamed rice and spiced vinegar for dipping.

🦐 Craving something creamy, spicy, and uniquely Filipino?
Try this flavorful Maranao dish – Piyaparan a Udang!
Shrimp simmered in creamy coconut milk, rich turmeric, and the distinct aroma of palapa and pamapa – every bite is bursting with tradition and taste! 💛

✨ Here’s how to make it:

🧄 Ingredients:

✅½ kilo shrimp (cleaned, deveined)
✅2 cups coconut milk
✅2 tbsp palapa (Maranao chili condiment)
✅1 tbsp pamapa (Maranao spice powder)
✅1 small onion, chopped
✅4 cloves garlic, minced
✅1 thumb-sized ginger, sliced
✅1 tsp turmeric powder
✅1 stalk lemongrass (optional)
✅Salt or fish sauce to taste
✅Sliced sakurab or spring onions for garnish

👩‍🍳 How to Cook:

1. Sauté garlic, onion, and ginger until fragrant.
2. Add palapa and pamapa, cook for 1-2 minutes.
3. Toss in the shrimp and stir until lightly pink.
4. Pour in the coconut milk, add turmeric, and lemongrass.
5. Simmer until shrimp is cooked and sauce slightly thickens.
6. Season to taste. Garnish with sakurab or green onions.

Serve hot with white rice and enjoy the taste of Lanao culinary heritage in every spoonful! 🍚
