Meet the "Joan of Arc of the Visayas" who outsmarted and outfought colonial forces.

When the Katipunan revolution spread across the archipelago, Teresa Magbanua of Iloilo didn't hesitate. Despite her husband’s objections, she joined the Katipunan forces in the Visayas, becoming the only woman to lead combat troops in the region. Known for her ferocious horseback riding and tactical brilliance, "Nay Isa" led her troops to victory in multiple battles against Spanish forces. To keep her soldiers energized during grueling mountain campaigns, rich, collagen-packed, slow-cooked beef stews were essential fuel.

The Supremo’s favorite meal was prepared using the gifts of the Philippine earth.

Before Andres Bonifacio became the Supremo of the Katipunan, he was a young man from Tondo who knew the value of resourceful, traditional cooking. Historical accounts note that when Katipuneros hid in the forests of Balintawak and Montalban, they often cooked meat wrapped in banana stalks (saha) over open fire coals to keep smoke to a minimum and retain moisture. Cooking sa saha wasn’t just a culinary technique—it was a survival art practiced by the brave men and women hiding in plain sight.
