French Macarons are a beast to make. Plus add the learning curve to make them sans eggs and other animal derived ingredients. As if that hurdle isn’t enough, a sudden burst of rain on baking day can ruin your macarons and all you can do is helplessly watch your macaron shells break while it’s baking in the oven. Every baker who has tried to make these have had their hearts broken a few times before they get it right. Still, we continue to practice and make them because everytime we get it right, we are completely charmed by these cute little pastry divas. ❤️
