sharing with you my easy peasy sunday lunch recipe:

(1 pot) creamy tuscan chicken pasta

what you need:
two tomato concasse
500g chicken fillet, cubed
5 tsp italian seasoning
4 tsp spanish paprika
red pepper flakes / red chili flakes
kosher salt
black pepper
3/4 cup grated parmesan cheese
2 tbsp salted butter
1 medium shallot, chopped
3 cloves garlic, chopped
500g rigatoni pasta
1 cup heavy cream
3 tsp dijon mustard
2 cups baby spinach
juice of 1 lemon

method:
•drain 3 tablespoons of oil from the two tomato concasse jar into a large pot or skillet.
•set the pot to medium-high heat and add the chicken, 3 teaspoons of italian seasoning, paprika, red pepper flakes / red chili flakes, salt and pepper. cook until brown about 5 minutes. add 1/4 cup parmesan cheese and cook for another minute. remove chicken from pot.
•in the same pot, add butter, garlic, shallot and 2 teaspoon italian seasoning. cook until fragrant, about 3 minutes. add 3 1/2 cup water and bring to a boil. then add the pasta, stirring often, cook until al dente about 8-9 minutes. stir in the heavy cream, dijon mustard, parmesan cheese, baby spinach, two tomato concasse oil and cherry tomatoes. stir for a bit make sure everything is mixed thoroughly. slide the chicken and any juices left on the plate.
•serve the pasta topped with lemon juice and fresh parmesan.
•NOM!

as promised, sharing with you a quick video on how i prepared my cajun chicken & shrimp alfredo. see details below…

what you need
ortiz cajun sauce (or you can make your own cajun mix)
effien’ good cacio crema
cheese
chicken stock
corn flour
olive oil
butter
onions
garlic
mushrooms
salt & pepper to taste

method
marinate chicken and shrimp with cajun mix (preferably overnight, if not at least two hours before cooking). cook chicken and shrimps with olive oil, remove once cooked. set aside. in the same pan, put butter then onions. sauté onion until soft, add garlic and mushrooms. add corn flour, cacio crema, chicken stock. stir. add salt and pepper to your liking. add cheese. then add pasta of choice (linguine, fettuccine, tagliatelle, penne), mix and then top with cajun shrimps and chicken, fresh parsley or basil. NOM!

i used ’s cacio crema universal sauce and cajun sauce to marinate the chicken and shrimp.
