Over the years, ramen has easily been one of our most requested dishes. We’re happy to finally be able to offer it at Tanoshi.šŸœ

We wanted something that felt at home alongside the rest of the menu. What we settled on is our take on Hakata Ramen, with a medium-rich tonkotsu broth, thin noodles, chashu, and classic Hakata-style toppings.

It’s been a while since I’ve made ramen, and knowing how personal people’s preferences for it can be, I knew it was going to be quite a challenge.

Personally, I enjoy gyokai ramen—a kotteri-style broth made with pork and fish. But after developing and tasting it for Tanoshi, I felt it was a little too overpowering and stood out too much against the rest of the menu. It’s also the kind of ramen I personally couldn’t eat very often.

Since we were only going to offer one ramen, I knew I had to find the right balance: rich enough for younger ramen lovers, yet not so heavy that our older guests wouldn’t enjoy it. In the end, I made a last-minute change in direction and settled on a Hakata-style ramen—a medium-rich broth with thin noodles and a lighter bite. We gave it our own touch and made it slightly richer and lighter on the salt and umami. It’s comforting, satisfying, and something that still pairs wonderfully with a beer, which was a nice bonus.

Usually from a konbini. Sometimes from a small cafƩ. Something simple you randomly picked up in the middle of the day, but somehow still remember after the trip.

The difference comes down to the cut. Salmon belly is naturally richer than the loin, with more marbling that gives it a buttery texture and an almost creamy finish. If you like sashimi that practically melts on your palate, salmon belly is worth trying.
