Just look at the photo—that is the exact meat that just landed in my kitchen!

I cornered some absolute beauties: 1.5-inch thick Picanha Steaks branded Excel from Cargill. For those who know their meat, this is premium Alberta Double A (AA) Beef at its absolute finest.

Look at that iconic, beautiful fat cap! If you've never had a true picanha (top sirloin cap), that fat melts down as it cooks and completely self-bastes the meat.

Because they are hand-cut to a massive 1.5 inches, they are going to get an incredible steakhouse crust while staying perfectly juicy and tender on the inside.
