(1) Crispy Garlic Chili Tofu
Ingredients
For the tofu:
* 400 g firm or extra-firm tofu
* 2 tbsp cornstarch
* ½ tsp salt
* ¼ tsp black pepper
* 2 tbsp vegetable oil
For the garlic chili sauce:
* 4 cloves garlic, minced
* 1 tbsp butter (optional, for richer flavor)
* 2 tbsp soy sauce
* 1 tbsp oyster sauce
* 1 tbsp honey or brown sugar
* 1 tsp sesame oil
* 1 tsp chili flakes (adjust to taste)
* ¼ tsp black pepper
* ¼ cup water
* 1 tsp cornstarch mixed with 2 tbsp water (slurry)
Garnish:
* 2–3 green onions, sliced
* Sesame seeds (optional)
Instructions
1. Press the tofu for 20–30 minutes to remove excess moisture.
2. Cut into 1-inch cubes.
3. Toss tofu with cornstarch, salt, and pepper until evenly coated.
4. Heat oil in a nonstick skillet over medium-high heat.
5. Fry tofu for 3–4 minutes per side until golden brown and crispy. Remove and set aside.
6. In the same pan, melt the butter (if using), then sauté the garlic until fragrant.
7. Stir in soy sauce, oyster sauce, honey, sesame oil, chili flakes, black pepper, and water. Simmer for 1 minute.
8. Add the cornstarch slurry and cook until the sauce thickens slightly.
9. Return the tofu to the pan and gently toss until each piece is coated in the glossy sauce.
10. Sprinkle with sliced green onions and sesame seeds before serving.
(2) Spicy Mapo Tofu
Ingredients
Main:
* 400 g soft or medium-firm tofu, cut into 1-inch cubes
* 250 g ground pork (or ground beef)
* 2 tbsp vegetable oil
* 4 cloves garlic, minced
* 1 tbsp ginger, minced
* 3 green onions, sliced (white and green parts separated)
Sauce:
* 2 tbsp doubanjiang (Chinese chili bean paste)
* 1 tbsp chili oil
* 1 tbsp soy sauce
* 1 tbsp oyster sauce
* 1 tsp dark soy sauce (optional, for color)
* 1 tsp sugar
* 1 cup chicken broth
* 1 tsp toasted sesame oil
* ½–1 tsp Sichuan peppercorn powder (optional but authentic)
* 1 tsp crushed red chili flakes (optional for extra heat)
Thickener:
* 2 tsp cornstarch
* 2 tbsp water
Instructions
1. Bring a pot of water to a gentle simmer. Add the tofu and cook for 2 minutes. Drain carefully and set aside.
2. Heat the oil in a wok or deep skillet over medium-high heat.
3. Add the ground pork and cook until browned.
4. Stir in the garlic, ginger, and the white parts of the green onions. Cook for about 30 seconds.
5. Add the doubanjiang and chili oil. Stir-fry for 1 minute until fragrant.
6. Mix in the soy sauce, oyster sauce, dark soy sauce (if using), sugar, Sichuan pepper, and chicken broth. Simmer for 3–4 minutes.
7. Gently add the tofu cubes and carefully stir. Simmer for 5 minutes so the tofu absorbs the flavors.
8. Stir the cornstarch slurry, then slowly pour it into the sauce while stirring gently until the sauce thickens.
9. Finish with sesame oil and sprinkle the green parts of the green onions on top.

(3) Crispy Fried Tofu with Bang Bang Sauce
Ingredients
For the Tofu
* 400 g extra-firm tofu
* 1 cup all-purpose flour
* 2 large eggs, beaten
* 1½ cups panko breadcrumbs
* ½ cup cornstarch
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp paprika
* ½ tsp black pepper
* 1 tsp salt
* Vegetable oil, for deep frying
Bang Bang Sauce
* ½ cup mayonnaise
* 3 tbsp sweet chili sauce
* 1 tbsp Sriracha (adjust to taste)
* 1 tbsp honey
* 1 tsp rice vinegar or lemon juice
* ½ tsp garlic powder
* ½ tsp smoked paprika (optional)
Garnish
* 2 green onions, finely sliced
* Sesame seeds (optional)
Instructions
1. Prepare the Tofu

* In one bowl, mix the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.
* Place the beaten eggs in a second bowl.

* 1 tsp paprika
* ½ tsp chili flakes (optional)
* 1 cup coconut milk
* ½ cup vegetable broth or water
* 1 tbsp soy sauce
* 1 tbsp oyster sauce (optional)
* 1 tsp brown sugar
* 1 tsp lime juice
* ½ tsp black pepper
Thickener
* 1 tsp cornstarch
* 2 tbsp water

* 2 tbsp soy sauce
* 1 tbsp dark soy sauce
* 1 tbsp oyster sauce (optional)
* 1 tbsp hoisin sauce
* 1 tsp sesame oil
* 1 tbsp rice vinegar
* 1 tbsp brown sugar or honey
* ¼ cup water or vegetable broth
* 1 tsp cornstarch mixed with 2 tbsp water

Ingredients
For the Crispy Tofu
* 500 g extra-firm tofu, pressed and cut into 1-inch cubes
* ¼ cup cornstarch
* 1 tsp garlic powder
* ½ tsp paprika
* 1 tsp salt
* ½ tsp ground black pepper
* Oil for frying
Vegetables
* 1 medium red onion, diced
* ½ green bell pepper, diced
* ½ red bell pepper, diced
* 3 cloves garlic, minced
* 2 green chilies, sliced (optional)
* 2 tbsp spring onions, chopped
Creamy Sisig Sauce
* ⅓ cup mayonnaise
* 2 tbsp Lady’s Choice sandwich spread (optional, for extra creaminess)
* 2 tbsp soy sauce
* 1 tbsp oyster sauce
* 1 tbsp calamansi juice (or lemon juice)
* 1 tsp Dijon mustard (optional)
* 1 tsp sugar
* ½ tsp ground black pepper
* 1 tsp chili flakes (optional)
* 1 tbsp butter
Instructions
1. Fry the Tofu
* Press the tofu for 20–30 minutes to remove excess water.
* Toss the tofu with cornstarch, garlic powder, paprika, salt, and pepper.
* Heat oil to 175°C (350°F).
* Fry the tofu for 4–5 minutes until golden brown and crispy.
* Drain on paper towels.
2. Make the Sisig Sauce
In a bowl, combine:
* Mayonnaise
* Sandwich spread
* Soy sauce
* Oyster sauce
* Calamansi juice
* Mustard
* Sugar
* Black pepper
* Chili flakes
Mix until smooth.
3. Cook the Sisig
* Heat the butter in a large skillet over medium heat.
* Sauté the garlic until fragrant.
* Add the onions and cook for about 1 minute, keeping them slightly crisp.
* Add the bell peppers and green chilies. Cook for another minute.
