What’s your go-to partner for Inihaw na Liempo?

Ingredients:
1.5 k pork belly
1c clear soda (sprite/7up)
1/2 c soy sauce
10 pcs calamansi
1/2 tbsp salt
1/2 tbsp pepper
1 head garlic, peeled and crushed
1/4 c brown sugar

❣️Mix all together and marinate overnight or at least 3 hrs 👍

No explanation needed, it’s beyond delicious 👏🏻😋 Mayo Ginger Soy Sauce Chicken

You’ve probably noticed I used the same mixture to marinate salmon in previous meals;
And you might’ve noticed I made this dish last time in a pot, and today I switched using a pan. Indeed, just to show you how good it is and how often I actually make it 😀✌🏻

Grated ginger + Kewpie mayo + soy sauce; I never thought this combination would elevate meat or seafood that much. The umami is something unique!!. 👌🏻👍🏻

Caramelized mayo, ginger, soy sauce stuck to the pan + shio kombu + chicken juices, everything ends up in the rice. That’s the real gold 🔥😋

The 10-minute “sauna” isn’t for the chicken, it’s for the rice to absorb it all. The chicken stays just as juicy, and never loses its yumminess. That’s the move. 👌🏻

👉🏻 Main:
Chicken thigh 1 pcs, about 200g
Grated ginger about 1 tbsp
Mayonnaise 1 tbsp (Kewpie)
Soy sauce 1 tsp (Lee K*m Kee)

👉🏻 Rice pan base:
Soaked rice, about 1 cup
Shio kombu, about 1 tsp
Water, about ½ cup

👉🏻 Finish:
Fresh chopped green onions + toasted sesame seeds + togarashi (S&B)

NOTE:
[ ] Soak the rice at least 30 mins before cooking

[ ] The key to making great claypot-style rice, whether in a traditional pot, in a rice cooker, or in a non-stick pan is to avoid using too much water!. Just use about ½ the usual amount of water is enough. Since the rice has been soaked, it has already absorbed some moisture!.👌🏻

Yakult Char Siu Pork

🍳 Recipe & Method
Ingredients:
2 pieces of pork shoulder
2 bottles of Yakult
1 bottle of water
Soy sauce – same amount as one bottle of Yakult (about 65ml)

Instructions:
1. Pan-fry the pork over low heat until golden on both sides.
2. Add Yakult, soy sauce, and water (use Yakult bottles for measurement).
3. Bring to a gentle boil, cover, and simmer for 25 minutes, flipping halfway through.
4. Remove the lid and cook on high heat until the sauce thickens.

The result is tender, fragrant pork infused with a hint of Yakult sweetness — a perfect balance of savory and gentle milky aroma.

CRISPY SWEET CHILLI BEEF: EASY RECIPE

Quicker than ordering in and no gatekeeping here it will taste better than takeout 😋

SERVES 2: Difficulty ⭐️⭐️

📌Thinly slice approx 300g steak of choice. The thinner the better! Pat dry, add to a bowl and add the following.

📌 3 tbsp cornflour (cornstarch)
📌 1 tbsp plain flour (all purpose)
📌 1/2 tsp black pepper

📌 Toss through making sure all the strips are coated.

📌 Make the sauce. Add the following to a bowl and mix well.

📌 4 tbsp sweet chilli sauce
📌 2 tbsp honey
📌 2 tsp light soy sauce
📌 1 tsp rice vinegar
📌 1 tsp garlic & ginger paste

🥩 Heat approx 100ml vegetable oil in a pan or wok and once hot add the strips (in batches) cook for 3-4 minutes. Remove with a slotted spoon to a plate lined with kitchen paper.

🥩 Once all the strips are cooked for extra crispness add them back and double fry for 1 minute (optional but worth it)

🥩 Dispose the oil (or use another pan) and add the sauce. Once it comes to a simmer add 2 tbsp water. Simmer on low for 1-2 minutes. Add the beef back in and toss through making sure all the strips are nicely coated.

🥩 Serve immediately over steamed rice, garnish with finely sliced spring onion or sliced red chilli and enjoy 😉
