Glass when exposed to heat can crack.
Better set the coils on metal or aluminum and away from glass .

My Bacolodnon cook and I forgot to protect the glass and admittedly, I didn't know that heat can crack glass. Despite the mishap, nothing can dampen my joy in learning the secret ingredient to Bacolod Chicken Inasal. And I got floored. Dishes do have secret ingredients to make it a hit. So im feeling a little ouch yet more Yay!! 😋🙏🏼

Grilled Squid and Shrimp on Korean cast iron

Cooking on cast iron grill pan makes cooking easy and exciting especially when cooking is done outdoors on a Korean butane stove.

Ingredients:
1 kilo squid
1/2 kilo shrimp
Tomatoes
Onion
Scallion
Salt & Pepper

Procedure:

Clean Squid and shrimps. Rub with salt and pepper. In a bowl mix tomatoes, onion and scallion and season with salt and pepper. Stuff squid with tomatoes, onion and scallion.

Oil the pan adding a thin layer. Grill the shrimp. Set aside when cooked. Serve on a separate dish.

Using the same pan, add again a thin layer of oil. Grill stuffed squid until cooked. Make sure to turn squid and coat it with its ink for added flavor. Be careful not to burn squid ink. Serve on a plate and enjoy. Best served with sauce made out of soy sauce, vinegar, garlic, onions and tomatoes. Yum!!

Serves 3-5

Cooking time: approx 15-20 minutes

Steamed Lapu-Lapu/Grouper Fish

Valued for it's flavor and texture, Lapu-Lapu is considered to be one of the best-tasting fish in the Philippines.

Ingredients:

1 kilo medium-sized Lapu-Lapu
Onion leeks/Scallion
Sliced Ginger
Salt & Pepper

Sauce:
Light Soy Sauce
Chinese Wine 2tbs
Ginger
Sesame Oil (3tbs)

Procedure:
Clean and degutt fish. Season with salt and pepper. Place Lapu-Lapu on a foil and let sit on a steamer. Top with ginger and onion leeks. Mix all ingredients for the sauce and pour over the fish. Steam fish for about 30 minutes. Serve and enjoy!

Serves: 3-5

Cooking Time: 30 minutes

Paksiw na Kitang or Spotted S**t Fish

Kitang Fish has a tender, flavorful meat that is usually cooked Pinangat or Paksiw. Have a delightful seafood lunch or dinner with each bite.

Ingredients:

Garlic
Ginger
400 grams Kitang Fish
Onion
Vinegar
Sili Haba
Salt & Pepper

Instructions:

Clean Kitang Fish, degutt and descale. Place fish in a cooking pot and add in garlic, ginger, onion, vinegar, 1/4 cup water, salt and pepper. Bring to a boil and add siling haba. Cook for 15-20 minutes.

Place in a bowl or fish plate. Serves 2-3.
