๐๐๐ง๐ฃ๐๐ฃ๐: ๐๐๐๐๐ก๐ฎ ๐๐๐๐๐๐ฉ๐๐ซ๐๐ Try this Easy Ube Mochi with Jolly Cow Condensed Milk at home!
๐ Ingredients:
For the Mochi Dough:
1 cup glutinous rice flour
ยฝ cup ube powder or ยฝ cup ube jam
ยผ cup sugar
ยฝ cup Jolly Cow Fresh Milk
ยผ cup Jolly Cow Condensed Milk
1 tbsp cooking oil (optional, for softer dough)
A few drops ube flavoring (optional, for deeper color)
For the Cheese Filling:
ยฝ cup cream cheese, softened
2 tbsp Jolly Cow Condensed Milk (to sweeten)
For Topping:
Shredded cheese (mild cheddar or quickmelt works well)
For Dusting:
Cornstarch OR toasted glutinous rice flour
๐ฉโ๐ณ Instructions:
1. In a small bowl, mix cream cheese & Jolly Cow Condensed Milk. Mix until smooth and creamy.
2. Scoop into small teaspoonโsized balls and freeze for 10โ15 minutes so they firm up.
3. In a microwaveโsafe bowl, combine glutinous rice flour, ube powder or ube jam, sugar, Jolly Cow Fresh Milk, Jolly Cow Condensed Milk, oil and ube flavor (optional). Mix until smooth and no lumps.
4. Cover with plastic wrap (leave a small vent).
5. Microwave for 1 minute, then mix.
6. Microwave again for 1โ2 more minutes, mixing halfway, until the dough becomes thick, sticky, and stretchy.
7. Dust your hands and work surface with cornstarch or toasted glutinous rice flour.
8. Scoop about 1โ2 tbsp of mochi dough, flatten into a circle.
9. Place a frozen cheese ball inside.
10. Seal the edges and shape into a smooth ball.
11. Top each mochi with a generous amount of shredded cheese.
