YO? Lamayo is a method of local food marinating preparation which we Palaweños do, of fresh danggit (spinefoot/rabbitfish) with vinegar, pepper, salt and garlic. It is the counterpart of the marinated bangus of Dagupan. It is usually boneless and dried either air-dried or sun-dried. Lamayo is very famous in Palawan. Every buffet table of local hotels and restaurants serves this daily for breakfast. It is crispy, meaty and very flavorful when cooked (pan-fried). It’s fantastic when paired with sinangag (garlic fried rice) and egg with vinegar to dip-in. This is called LAMSILOG (LAMayo-SInangag_itLOG). Absolutely DELICIOUS!!!
