The Kitchen wishes gong xi fa cai to our Filipino-Chinese friends!

Tikoy is the Filipinized version of the word ti-ke which means sweet cake in Hokkien. It’s also a form of nian gao or rice cake, which is said to bring good luck to the Chinese people, and a traditional delicacy popularly served during the Lunar New Year. Its sweetness and sticky consistency symbolizes the healthy bond and close relationships among friends and family. It’s also believed that eating it will attract luck to stick to you throughout the year.

Kinilaw is a seafood dish made by cooking or curing seafood with vinegar or citrus fruits, flavored with onions, ginger, and chili peppers. This thousand-year-old cooking method has survived various historical events and food trends. The first written mention of kinilaw was by Pigafetta, a chronicler of Magellan's voyage.

The crowd pleasing “star” of any celebration, Lechon!

Lechon, a Filipino whole roasted pig, is a popular party food, as well as a unique discovery for foreigners. The Cebu lechon that originated in Talisay is stuffed with lots of lemongrass, tamarind leaves, leeks, garlic, shallots, salt, and pepper. This lechon can stand on its own without any dipping sauce, unlike Luzon’s version which is paired with a rich liver sauce.
