Here’s a simple recipe for our Purong Jacob's Purong Aligue Pasta:
Ingredients:
200g spaghetti
2 tablespoons olive oil
4 cloves garlic, minced
1 small onion, finely chopped
1 bottle crab fat (also known as aligue or taba ng talangka)
1 cup all-purpose cream
Salt and pepper to taste
Grated Parmesan cheese
Chopped parsley for garnish
Instructions:
Cook the spaghetti according to the package instructions. Drain and set aside.
In a large pan, heat the olive oil over medium heat. Add the garlic and onion, and sauté until fragrant and the onions are translucent.
Add the crab fat to the pan and stir well to combine with the garlic and onion.
Pour in the all-purpose cream and stir until well combined. Season with salt and pepper to taste.
Add the cooked spaghetti to the pan and toss until the pasta is well coated with the sauce.
Serve the pasta in bowls, topped with a generous sprinkle of Parmesan cheese and a garnish of chopped parsley.
