Carrie never liked pandesal because of the breadcrumbs (too messy for her taste 😅)

So I rolled up my sleeves and learned how to make brioche instead. This morning’s bake: pillowy soft brioche buns, made pandesal-size, but without the crumbs. ✨🍞

“…la siya weird aftertaste.” 📝 That was one of the very first feedback we got when we started selling cookies a month ago.

Truth is, I’m not even a sweet tooth myself. I can live on just Starbucks cake slices whenever I’d hit 100 stars. So I honestly don’t have much of a benchmark for pastries. What I did have was my husband’s childhood memories growing up in New York, when my mother-in-law would buy David’s Cookies. (Hindi naman niya ako ma-fly to NY for ‘taste testing’ kasi, sorry, hindi siya contractor LOL).

So I went on a little cookie journey, ordering from mall pop-ups just to figure out what this customer meant by “weird aftertaste.”

And here’s what I think we’re doing differently at Carrie’s Corner:

1. I have a separate oven (not even fancy, just a regular Kyowa) which I use only for cookies and breads. We don’t bake our pastries in our home oven which we use for our ulams.
2. I only bake by demand, no reheating batches over and over, which changes the flavor profile.
3. I only use real butter, never butter compound. And I take the extra step of browning it for that deep, caramel-y flavor.

That’s probably why you won’t get that “weird aftertaste” here — just gooey, chewy cookies baked fresh for you. 💛
