Being able to make fermented food is a good skill. Thanks in part to two different starters we have so far. Having our starters is like having additional children, what with the need to feed them and check up on them, and the need to make sure they are healthy and are doing their jobs well.

The more you know, the more you realize that you don't really know. It's a good thing that there is no cap to knowledge accumulation and there are no limits to knowledge application.

At this point in history, even with all our technological advances and conveniences, it is humbling to realize that as a collective group of people younger than 60 years, we may know much less than what the collective living older generations have already forgotten.

It is saddening that we don't even know what we should know, and we are unbothered by it. This is still just about fermentation. But, this thought applies to all other fields of knowledge.

We try to make the best of what we have and what we can get our hands on. Ingredients are not always organic, whole, locally-sourced, the freshest, nor preservatives-free. But, we can always count on fermentation to elevate even the simplest of ingredients.

We are not saying that you buy our kimchi and eat it every day. It does not have to be our kimchi, it can be any kimchi as long as it's really alive with microbes beneficial for the gut. It does not even have to only be kimchi, it can be any combination of unpasteurized naturally fermented food. It does not have to be fancy and bought, it can be simple and homemade by you yourself, for you and your family. It does not even have to be every day and all the time, it can be any time you can and any time want. Start small, start where you are.

I know I did before and you will, too, now: have excuses why not to eat homemade, why to opt for the convenient and cheap. Healthy is expensive, my time is better used making money, too tired to cook, too little time, no skills, no fully equipped kitchen, no help, etc.

But when you realize that life's currency is not money but actually your time and health, you will think more carefully about how you spend your time and what you put into your body. You start using your money more wisely to afford you wiser use of your time (like time with God, time with family, skills building, serving and giving back, enjoying the fruit of your labor, and resting) and healthier options to eat (does not have to be certified organic, it just has to be alive and unpasteurized, fermented if possible, nutritious and nourishing, life-giving, all-natural, seasonal, local, and made by people you actually know).

When you realize that the relationships and the body you build now are investments for your future, you start spending time with the people who matter the most and you start eating healthy with and for them, now and not some other day that you are not guaranteed.

As it has been said, you choose your hard: hard now and easy later, or easy now and hard later; hard now that leads to much joy later, or easy now that leads to much suffering later.

And might we add, you choose your expensive: expensive now and zero expenses (and better quality of life) later, or cheap now and very expensive (hospital bills and agonizing quality of life) later.

Go for the eventual value (to time, to health, to quality of life, to enjoyment, to the future you want), not the apparent price tag. You can always earn more money, but you cannot buy back time and an irreparably destroyed body.

Not all kimchi makers are the same and not all kimchi are the same, that is why we respect that not all customers are meant for us. Thank you to our patrons for being our customers.

Be it kimchi or other products, some customers chase bargains and expect discounts. These same customers may not even correctly appraise the quality of the output/product. These are the same customers who often do not make appreciation referrals, or worse, refer fellow customers who also expect bargains and discounts. At the other end of the spectrum, some customers chase quality and understand the price that such quality demands. These same customers have tried out many brands & suppliers and understand the real bang for the buck, and will gladly make unsolicited referrals and/or appreciation posts as support.

FermentNation started out with making fermented food that our own family eats. We are a home-maker of small-batch kimchi, without a dedicated production staff. With ourselves as our main critic, we have curated a recipe and procedure that give us the kimchi we ourselves like every time. To our patrons, thank you for liking the kimchi that we like.

Just when we thought that our September batch of Kimchi was our last hurrah for 2025, we got a special order for a batch to be given away as New Year’s gifts. Thank you so much for the patronage!

A late happy new year to all, from our home kitchen to yours! Here’s to praying for a God-centered twelve months of 2026.

And just in case you missed rolling out resolutions at the strike of midnight of January 01, know that we need not wait for the start of a new year to begin any needed change. With the renewing of our minds and for God’s glory, we can start changes any day and any time.
