Not all coconut milk is the same. 🥥

Every week, we visit our coconut lady at the local farmers market — she grinds it fresh, right there, no shortcuts.

Most packaged coconut milk carries added water, gums, emulsifiers, sometimes sugar — none of it essential to real Caribbean cooking.

Fresh is more perishable, so it takes more care on our end: proper chilling, careful handling, small batches.

That's what goes into our Rice & Peas, Curry Goat, and Oxtail.

From raw to ready — nothing rushed. 🔥

These ribs get seasoned, then worked into our jerk sauce and left to marinate a minimum of 24 hours — the flavor needs time to actually get in, not just sit on top.

Then straight onto the grill, low and slow, until the char builds and the fat renders down right.

By the time it's ready to chop, you can see it — the color, the crust, the pull. That's what real jerk looks like when nobody cuts corners.

Part 2: The Cure. 🇯🇲

The seasoning is done. Now the hardest part begins — 7 days of doing nothing.

No fire. No smoke. Just the fridge, the time, and the discipline to leave it alone.

This is the part most people skip. The part you don't see in the final product but taste in every bite. Each day that beef belly sits, the cure is working — pulling moisture out, locking flavor in, turning seasoned meat into something built to survive the smoker.

7 days down. Then it's fire time.

This is where it all begins. 🇯🇲

Before the fire, before the flavor — there's the prep. The seasoning. The silence.

9 days. Every layer intentional. And in that process? I find peace.

This feeling isn't mine alone. Every real cook/griller knows it — that quiet focus when you're deep in the work, paying attention to every detail because the meat deserves it. The people eating it deserve it.

But standing here, I always think about Mensie.

Did she feel this same thing? Hours in the kitchen, hands in the seasoning, checking everything twice — not for applause, just to make sure the people she loved were fed right.

I believe she did.

That's what Mensie's Jerk House carries — her intention.

Six hours in the smoke. Then glazed.

Jerk Rib Tips — pork burnt ends done the Mensie's way. Low and slow until the bark locks in, then finished with our in-house Mango Sauce. Sweet. Smoky. Heat that creeps up on you.

Vacuum sealed and ready for delivery, so every bite hits the same as it did coming off the smoker.
This one's for the people who know what patience tastes like.

Mensie's isn't fully open yet — but the menu is being built, one cook at a time.
