Tomato Egg Stir Fry Recipe 👇!

Ingredients (Serves 2-3):

• 3-4 eggs
• 2-3 medium tomatoes (peeled and chopped)
• 1 tbsp soy sauce
• 1 tbsp oyster sauce
• 1 tsp sugar
• 1 tsp ketchup
• 1/4 tsp white pepper
• 1 tbsp cornstarch + 2 tbsp water (optional)
• 2-3 garlic cloves (minced)
• 2 tbsp neutral oil
• Spring onion (for garnish)

Instructions:

1. Scramble eggs:
◦ Beat eggs with a pinch of salt.
◦ Heat 1 tbsp oil in a wok, scramble eggs until 70% cooked, then set aside.2,3,4

2. Cook tomatoes:
◦ Add remaining oil to the wok. Sauté garlic until fragrant.
◦ Add chopped tomatoes and cook until softened (2-3 minutes).
◦ Stir in soy sauce, oyster sauce, sugar, ketchup, and white pepper. Simmer for 1 minute.2,3,4

3. Combine and thicken:
◦ Return eggs to the wok and gently mix with the tomato mixture.
◦ If desired, add cornstarch slurry to thicken the sauce. Cook for another 30 seconds.4,5
4. Finish and serve:
◦ Drizzle with sesame oil and garnish with spring onion. Serve hot with steamed rice.
