PORK SISIG RECIPE

Ingredients:

1 pound pork face (such as pork ears, pork jowl, or pork belly), boiled and diced
1/2 cup calamansi (Philippine lime) juice
1/4 cup vinegar
1/4 cup soy sauce
1 tablespoon salt
1/2 teaspoon black pepper
1/4 teaspoon chili peppers or chili flakes (optional)
1/4 cup chopped green chilies or chili peppers (optional)
1/4 cup chopped onions
2 cloves garlic, minced

Procedure:
1. *Boil the pork*: Boil the pork face in water until tender. Let it cool, then dice into small pieces.
2. *Mix the ingredients*: In a large bowl, combine the diced pork, calamansi juice, vinegar, soy sauce, salt, black pepper, and chili peppers (if using). Mix well.
3. *Add aromatics*: Add the chopped onions and minced garlic to the bowl and mix well.
4. *Taste and adjust*: Taste the sisig and adjust the seasoning as needed.
5. *Serve*: Serve the sisig on a sizzling plate, garnished with chopped green chilies or chili peppers (if using). Traditionally, sisig is served with a squeeze of calamansi juice and a dash of chili peppers.
