At the recent The Ocean’s Bounty International Dinner at Hilton Manila in Newport World Resorts, Executive Chef Lord Carlo Bayaban showcased the incredible potential of sustainably sourced local seafood from 7 Hectares.

From delicately seared apahap and pan-seared trevally to a vibrant seafood bucket overflowing with the bounty of Philippine waters, every dish reflected how local ingredients can be elevated to a truly world-class dining experience.

The dinner was more than a showcase of culinary artistry — it was a celebration of sustainability, responsible sourcing, and the hardworking local fishing communities behind every catch.

Proof that when care, craftsmanship, and exceptional local produce come together, Philippine seafood can stand proudly on any global table.

Terra Madre APAC is not only about food. It was more on the gathering of people and communities who really cared for our Motherland. The Philippines. Most Filipinos ignore or not care for our island. They don’t pay attention to much on the pain that she is suffering. But through these gatherings we get the opportunity to strengthen each other and infect others of our passions.
