Don't be fooled by color alone. A lighter-colored "muscovado" does not automatically mean it is purer. In many cases, it may be more refined or processed than authentic raw muscovado.

Always check the source and make sure you're buying genuine, raw muscovado sugar—not converted or heavily processed sugar being marketed as healthy.
