๐ฅ Why are fresh hard-boiled eggs harder to peel?
Have you ever boiled a fresh egg and ended up with a messy-looking egg because the shell wouldnโt come off easily? Hereโs why:
Fresh eggs have a lower pH level, which means the egg white sticks more tightly to the thin layer under the shell. When you boil a very fresh egg, the egg white can cling to the shell, making peeling difficult.
As eggs get a little older, the air slowly enters through tiny pores in the shell. This changes the eggโs chemistry, making the egg white less sticky and allowing the shell to come off more easily.
Simple tip:
If you want easy-to-peel boiled eggs, use eggs that have been stored for about 1โ2 weeks (if properly refrigerated). You can also place boiled eggs in ice water right after cooking to help loosen the shell.
