π EATlog RECIPE β’ EGG TUNA SALAD POCKETS
Ingredients:
- 4 hard-boiled eggs, chopped
- 1 can of tuna (drained, in water or olive oil)
- 1/4 cup plain Greek/plain yogurt
- 1 tsp mustard (optional)
- 1/4 cup chopped onions
- 1/4 cup diced cucumber
- Salt and pepper to taste
- 4 sourdough pita pockets (find low-carb / low glycemic options)
- optional add one: lettuce, tomato, or bell pepper for added crunch, color and nutrition.
- optional chili flakes for some βkickβ
Instructions:
1. Mix chopped eggs, tuna, yogurt, mustard (if using), onions, and cucumber in a bowl. Season with salt and pepper.
2. Cut pita pockets in half and toast lightly.
3. Fill pitas with egg-tuna
and add veggies of choice.
