Working on the beverage program for Del Union was one of the more deceptive tasks our team had to do. Building the menu was pretty straightforward—serve the espresso classics alongside our signature drinks and make sure we gave the people what we’re most known for: the Dirty Horchata.
Back in San Juan, we had to establish a production lab to deal with the volumes each day. By batch kegging drinks across the street from Great Northwest, we were able to sling Cold Brews and Horchatas quickly and consistently to keep the lines moving. Unfortunately, we didn’t have the space or the manpower to do the same in BGC.
We decided to keep production in LU and deliver stock to Manila weekly. Though costly, this allowed us to keep quality consistent while ensuring we’re able to keep up with customer demand. To extend shelf life and minimize spoilage, we had to deconstruct all our pre-mixed drinks — horchatas and cold brew lattes — and build them to order. This meant redoing our established service flow while still maintaining pace. We’re happy to report that we’re still the fastest bar in the country 13 months running.
Often overlooked are our team’s efforts on product development. Since opening, we’ve introduced 10 new drinks to the menu including the Dirty Champorado, a modified Dirty Orxata with Malagos Chocolate, and the Orange Soda, a refreshing fizzy drink that uses our in-house ‘tonic’ water and natural orange syrup. The latter would become our very first drink that was developed entirely in BGC.
Our time in Manila truly showed the ingenuity and commitment of our team to delivering quality beverages unlike anywhere else. While we may no longer be around to serve you these drinks ourselves, we close knowing that our shop’s legacy lives on through the drinks we created that’ll be served back home in La Union.
