Working on the beverage program for Del Union was one of the more deceptive tasks our team had to do. Building the menu was pretty straightforward—serve the espresso classics alongside our signature drinks and make sure we gave the people what we’re most known for: the Dirty Horchata.

Back in San Juan, we had to establish a production lab to deal with the volumes each day. By batch kegging drinks across the street from Great Northwest, we were able to sling Cold Brews and Horchatas quickly and consistently to keep the lines moving. Unfortunately, we didn’t have the space or the manpower to do the same in BGC.

We decided to keep production in LU and deliver stock to Manila weekly. Though costly, this allowed us to keep quality consistent while ensuring we’re able to keep up with customer demand. To extend shelf life and minimize spoilage, we had to deconstruct all our pre-mixed drinks — horchatas and cold brew lattes — and build them to order. This meant redoing our established service flow while still maintaining pace. We’re happy to report that we’re still the fastest bar in the country 13 months running.

Often overlooked are our team’s efforts on product development. Since opening, we’ve introduced 10 new drinks to the menu including the Dirty Champorado, a modified Dirty Orxata with Malagos Chocolate, and the Orange Soda, a refreshing fizzy drink that uses our in-house ‘tonic’ water and natural orange syrup. The latter would become our very first drink that was developed entirely in BGC.

Our time in Manila truly showed the ingenuity and commitment of our team to delivering quality beverages unlike anywhere else. While we may no longer be around to serve you these drinks ourselves, we close knowing that our shop’s legacy lives on through the drinks we created that’ll be served back home in La Union.

Studio Kamusta sat down with and to look back on their experience working on Del Union.

Jeric and were our architects for the BGC shop. They’d been friends of since the early days when they would come by for coffee during their surf trips. Migs moved to LU years later, and we naturally found ourselves working together on a number of projects. When the opportunity to design a Manila shop came up, Migs was a few months away from immigrating to Australia. It’s through him that we ended up tapping Jeric as well, marking Del Union as their first collaborative effort in their years-long relationship.

Cuervo was the last addition to our pioneer team, joining just weeks before opening day. This meant he wasn’t able to join the rest of the crew who had come to LU months prior for training. We wanted our inaugural team to immerse in El Union’s culture and ways of working. Though we had no doubts about his coffee skills, embodying the shop’s values was usually harder to grasp without experiencing them firsthand. To say we lucked out with Cuervo would be an understatement, as he quickly showed us what it truly meant to be in the service of humans.

We’ve spent the better part of our stay in BGC constantly retooling and revisiting our food menu to find that balance between what we wanted to serve, what our customers wanted to eat, and what we could feasibly do with the limitations of our kitchen.

Few people know this but the reason why we couldn’t sustainably serve ’s Classic Grilled Cheese is because our space couldn’t accommodate a commercial exhaust system. That means no cooking with fire, very limited frying, and repeatedly toeing the line between what will or won’t break our air conditioning; a handicap we chose to see as a challenge instead.

Our kitchen team, led by & Alex and steered by N**s, Kim, Glenn, Frankie, Tyrone, Nica, IJ, & Kareem, worked on 3 different menus. Each one had new creations alongside more familiar dishes all done through a Northern Philippine lens. We relied on commissary support from .at.eliseos for ingredients that required more exhaustive cooking, a costly practice we slowly minimized with each new menu.

Tomorrow morning sees the return of Del Union’s flagship blend, TruNorte. ✨

Our statement of purpose in espresso form, TruNorte features 3 northern Philippine coffees sourced from within 75km of Urbiztondo. This blend is a product of our roastery’s continued work with the Sigay Farmers of Ilocos Sur and the coffee farmers in Sablan and Tublay of Benguet via .

TruNorte 2.0 is now on serve at Del Union BGC. Jars of wholebean coffee are also available for a limited time in 100 gram and 175 gram increments. We’ll also be offering a 10% discount on all espresso-based drinks to those who buy jars on launch day.
