MIYU matcha is a blend of saemidori, yabukita, okumidori, asanoka, yutamidori and asatsuyo. This blend is perfect if you like your matcha sweetened or unsweetened because it has a mild bitterness, nutty and medium umami.
Suggested recipe
4g matcha powder
30g hot water(75C)
150g oat milk
15g honey (optional)
100g ice
Prep: Sift matcha powder to prevent clumps.
Soak: Soak the tips of the bamboo whisk in hot water for a minute to soften the tines and prevent breakage.
Paste: Combine the powder with a tiny amount of water first to create a smooth paste before adding the rest.
Whisk: Use a “W” or “M” shape motion, not a circle, moving back and forth quickly to maximize foam.
Finish: As foam forms, lift the whisk slightly higher to create a fine microfoam and break up large bubbles.
