🇳🇴 Smoked Salmon Bites — My Oslo Creation ✨

A little creation I made in Oslo for my family—beautiful Norwegian smoked salmon layered with creamy cream cheese, capers, and red onions on hearty whole-wheat bread. 🥖🐟

Usually, I would serve this combination on a bagel, but this is my own variation—and I love how the wholesome bread complements the rich, smoky salmon and tangy toppings.

Simple, fresh, and full of Norwegian flavor. ❤️🇳🇴

🇳🇴 A Classic Norwegian Celebration Cake — Marsipankake 🍰✨

A beloved Norwegian favorite, Marsipankake (Marzipan Cake) is traditionally enjoyed during birthdays, weddings, holidays, and special gatherings. Layers of soft sponge cake, luscious cream, and fruity filling are beautifully wrapped in smooth marzipan—a celebration in every slice!

A sweet taste of Norway and another delicious discovery on my culinary journey. ❤️🇳🇴

🇳🇴 A TASTE OF NORWAY — Traditional Norwegian Breakfast

Simple, wholesome, colorful and full of flavor! A traditional Norwegian-style breakfast starts with slices of hearty whole-grain bread, topped with an assortment of savory combinations. 🍞✨

On my plate: mackerel in tomato sauce with fresh cucumber, smoked Norwegian salmon with soft scrambled eggs, blue cheese paired with a sweet fruit preserve, and crisp lettuce with freshly sliced vegetables finished with remoulade—a creamy, tangy condiment with mustard, egg and mayonnaise.

I especially loved how the different flavors come together: smoky, creamy, tangy, fresh and just a little sweet. Nothing overly complicated—just good ingredients allowed to shine. 🇳🇴❤️

🇳🇴 A Taste of Oslo, Norway

Fresh cod, beautifully seared in garlic butter and olive oil, layered with spices, and topped with crispy bacon. Served alongside roasted vegetables and potatoes, this was one seriously memorable plate.

And the cod? Nearly two inches thick—tender, flaky, juicy, and cooked to absolute perfection. 🐟✨

But what really surprised me was the accompaniment: roasted garlic, olive oil, and soy sauce. Such a simple combination, yet incredibly innovative with the cod. The savory, garlicky richness brought everything together and gave the fish a flavor that was truly unique.

Definitely one of the BEST ways I’ve tasted cod! ❤️

🇳🇴 A TASTE OF NORWAY — BROWN CHEESE!

Norway is famous for its iconic Brunost — Brown Cheese, and this was definitely something I had to try! 🧀🇳🇴

Unlike your typical cheese, Brunost has a wonderfully unique sweet, creamy and caramel-like flavor. Imagine something somewhere between cheese and caramel fudge—rich, smooth, slightly tangy, and unmistakably Norwegian.

It’s one of those flavors that makes you stop for a second and think, “Is this really cheese?” 😋

🇳🇴 FÅRIKÅL — NORGES NASJONALRETT
Lamb & Cabbage Stew — Norway’s National Dish

A very special welcome dinner in Norway, lovingly prepared by my cousin. ❤️

Fårikål is one of Norway’s most beloved traditional dishes—a beautifully simple and comforting stew made with tender lamb and cabbage, slowly simmered together until the meat becomes fall-apart tender and all those wonderful flavors come together.

There’s something extra special about experiencing a country through a dish prepared at home by family. Simple, hearty, warm—and the perfect Norwegian welcome. 🇳🇴🥔🥬

Takk for maten!
Thank you for the food!

🇳🇴 A Taste of Oslo, Norway | Beef Brisket

My prowl for the next great bite takes me to Oslo, Norway! ✈️🍴

First on the table: slow-simmered beef brisket served over creamy mashed potatoes with beautifully roasted vegetables. The beef is cooked low and slow for hours until wonderfully tender, allowing all those deep, savory flavors to develop.

And that sauce? The rich, flavorful juices from hours of slow cooking are drizzled generously over everything—bringing the whole plate together. 🥩🥔🥕✨

Warm, hearty, rustic, and comforting—exactly the kind of meal you want to linger over.

More tastes and pictures from Oslo coming soon! 🇳🇴❤️

🦪 Crispy Southern Fried Oysters

Another delicious stop on my prowl for the next great bite! 🦪✨

There’s something irresistible about Southern fried oysters—crispy and golden on the outside, tender, juicy, and briny on the inside. That beautiful taste of the sea wrapped in a perfectly seasoned crunch!

Simple, rustic, and unmistakably Lowcountry—the kind of food that reminds you that sometimes the best bites don’t need to be complicated.

From the waters of the South to the plate… crispy, salty, briny and absolutely delicious! 😋

🍤 Creamy Lowcountry Shrimp & Grits

My prowl for the next great bite continues through the flavors of the South! 🌿

Few dishes say Lowcountry comfort quite like a warm bowl of creamy shrimp and grits. Plump, juicy shrimp nestled over rich, buttery, slow-cooked grits—simple ingredients transformed into something deeply satisfying.

Creamy, savory, and full of Southern soul, it’s the kind of dish that makes you slow down and enjoy every spoonful. ❤️

Charleston has a wonderful way of telling its story through food, and this is one Southern classic I simply had to taste.

Title of painting: "TheGoldenHour"

There is nothing quite like the golden hour at sunset in the Charleston, South Carolina marshlands .

The expansive salt marshes are transformed into an immersive tapestry of light and color transformed into a cinematic masterpiece where land dissolves into the sky. The absolute stillness is an invitation to depart from the frantic energy of the day and give way to a quiet and meditative calm that reminds us to rest and anticipate the comfort of coming home at the end of the day . It is a labyrinth of creeks that change in shape with the pulling of tide waters, punctuated by the cool breeze and emergence of different birds settling in for the night
Suddenly, the scent of the tangy and salty coastal air evokes exploration of the best Low Country cuisine such as shrimp and grits, plump oysters and fish...all from the salty waters of the marshes where the Charleston cuisine belongs to.
