Craving authentic restaurant-style Chicken Karahi? Try this easy, desi, full-flavor recipe made with simple ingredients and perfect masala balance.

🧂 Ingredients:
Chicken (bone-in): 1 kg
Fresh tomatoes (finely chopped): 5–6 medium
Ginger-garlic paste: 2 tbsp
Green chilies (slit): 4–6
Cooking oil or ghee: ¾ cup
Salt: to taste
Red chili flakes: 1–1½ tsp
Black pepper (crushed): 1 tsp
Cumin seeds (crushed): 1 tsp
Garam masala: ½ tsp
Fresh ginger (julienne): 2 tbsp
Fresh coriander (chopped): ½ cup
Lemon juice: 1–2 tbsp
👩‍🍳 Method:
Heat oil in a karahi on medium-high flame.
Add chicken and fry until color changes and moisture dries.
Add ginger-garlic paste and sauté until aromatic.
Add tomatoes, salt, cumin, black pepper, and red chili flakes.
Cook (bhuna) until tomatoes break down and oil separates clearly.
Add green chilies and cook 5–7 minutes until chicken is tender.
Sprinkle garam masala, add ginger julienne, and lemon juice.
Garnish with fresh coriander and serve hot.
🍽 Serving Suggestion:
Best served with naan, tandoori roti, or chapati, plus fresh salad and raita.

सामग्री

मटन या बीफ – 1 किलो

दही – 1 कप

प्याज़ (पतले कटे) – 3

अदरक-लहसुन पेस्ट – 2 टेबलस्पून

सरसों का तेल – ½ कप

हरी मिर्च – 4–6

नींबू का रस या सिरका – 2 टेबलस्पून

साबुत मसाले

मेथी दाना – 1 टीस्पून

राई – 1 टीस्पून

सौंफ – 1 टेबलस्पून

जीरा – 1 टीस्पून

कलौंजी – ½ टीस्पून

पिसे मसाले

लाल मिर्च पाउडर – 2 टीस्पून

हल्दी – 1 टीस्पून

धनिया पाउडर – 2 टेबलस्पून

नमक – स्वादानुसार

विधि

सरसों के तेल को हल्का धुआँ आने तक गरम करें और ठंडा करें।

साबुत मसाले डालकर खुशबू आने तक भूनें।

प्याज़ डालकर सुनहरा होने तक पकाएँ।

अदरक-लहसुन पेस्ट डालकर तेल अलग होने तक भूनें।

मांस डालकर तेज आँच पर अच्छी तरह भूनें।

दही थोड़ा-थोड़ा डालते हुए मिलाएँ।

पिसे मसाले और नमक डालें।

ढककर धीमी आँच पर मांस गलने तक पकाएँ।

हरी मिर्च और नींबू का रस या सिरका डालें।

तेज आँच पर 4–5 मिनट पकाएँ।

धनिया और अदरक से सजाकर परोसें।

اجزاء

گوشت (مٹن یا بیف) – 1 کلو

دہی – 1 کپ

پیاز (باریک کٹے ہوئے) – 3 عدد

ادرک لہسن کا پیسٹ – 2 کھانے کے چمچ

سرسوں کا تیل – آدھا کپ

ہری مرچیں – 4 تا 6

لیموں کا رس یا سرکہ – 2 کھانے کے چمچ

ثابت مصالحے

میتھی دانہ – 1 چائے کا چمچ

رائی – 1 چائے کا چمچ

سونف – 1 کھانے کا چمچ

زیرہ – 1 چائے کا چمچ

کلونجی – آدھا چائے کا چمچ

پسی ہوئی مصالحے

لال مرچ پاؤڈر – 2 چائے کے چمچ

ہلدی – 1 چائے کا چمچ

دھنیا پاؤڈر – 2 کھانے کے چمچ

نمک – حسبِ ذائقہ

ترکیب

سرسوں کے تیل کو دھواں آنے تک گرم کریں، پھر ہلکا ٹھنڈا کریں۔

ثابت مصالحے ڈال کر خوشبو آنے تک بھونیں۔

پیاز ڈال کر سنہری ہونے تک پکائیں۔

ادرک لہسن کا پیسٹ ڈال کر تیل الگ ہونے تک بھونیں۔

گوشت ڈال کر تیز آنچ پر اچھی طرح بھونیں۔

دہی تھوڑا تھوڑا ڈال کر مسلسل ہلاتے رہیں۔

پسی ہوئی مصالحے اور نمک شامل کریں۔

ڈھک کر ہلکی آنچ پر گوشت گلنے تک پکائیں۔

ہری مرچیں اور لیموں کا رس یا سرکہ ڈالیں۔

تیز آنچ پر چند منٹ دم دیں۔

ہرا دھنیا اور ادرک سے سجا کر پیش کریں۔

Mutton or beef – 1 kg

Yogurt – 1 cup

Onion (finely sliced) – 3 medium

Ginger-garlic paste – 2 tbsp

Mustard oil – ½ cup

Green chilies (slit) – 4–6

Lemon juice or vinegar – 2 tbsp

Whole Spices

Fenugreek seeds (methi dana) – 1 tsp

Mustard seeds – 1 tsp

Fennel seeds (saunf) – 1 tbsp

Cumin seeds – 1 tsp

Nigella seeds (kalonji) – ½ tsp

Ground Spices

Red chili powder – 2 tsp

Turmeric powder – 1 tsp

Coriander powder – 2 tbsp

Salt – to taste

For Garnish

Fresh coriander leaves

Ginger julienne

Cooking Method

Heat mustard oil until it smokes lightly, then cool slightly.

Add whole spices and sauté until aromatic.

Add onions and cook until golden brown.

Add ginger-garlic paste and cook until oil separates.

Add meat and fry on high heat for 8–10 minutes.

Add yogurt gradually while stirring continuously.

Add ground spices and salt; mix well.

Cover and cook on low heat until meat becomes tender.

Add green chilies and lemon juice or vinegar.

Cook on high heat for 5 minutes to develop achar flavor.

Garnish and serve hot.

Serving Suggestion:
Serve with naan, tandoori roti, or steamed rice.
