•Matcha Crepe Batter: 3 eggs, 30g fine sugar, 100g cake flour, 10g matcha powder, 300g milk,
30g butter
&: Matcha Cream: 500g heavy cream, 20g fine sugar, 8g matcha powder, 100g white chocolate,
80g heavy cream
Matcha Glaze: 4g matcha powder, 30g white chocolate, 35g heavy cream

Mousse Layer: 230g cream cheese, 50g fine sugar, 150g yogurt, 150g heavy cream, 100g hot milk, 8g gelatin, 10g strawberry powder, 1g prickly pear powder
