Not every chip starts with a potato. Chef Ramsha Khurram’s rainy day special is crispy baingan chips coated in a sticky imli glaze.

Would you try baingan like this, or are you sticking with pakoray?

Recipe

Aubergine/Baingan 300gm
Tempura flour 300gms
Soda water 500ml
Oil for deep frying

Sauce:
Shan Imli chutney 6 tbsp
Dates 5-6
Brown sugar 2 tsp
Water 100ml

Spice mix
Shan chaat masala 2 tbsp
1/2 tsp citric acid (tatri)

Method:
Cut long baingan into thin fries, mix tempura flour and soda to form a thin batter.
Deep fry until golden and crisp.
In a saucepan add shaan imli chutney, dates, brown sugar and water simmer till dates are soften, let it cool and form into smooth paste.
Mix shan chaat masala and tatri.
Toss fries with chutney and masala then serve

INGREDIENTS
200g chicken breast or thigh, sliced
1.5 tbsp yoghurt
1.5 tsp Shan Chicken Tikka Masala
1 tbsp lemon juice
1/2 tsp each ginger garlic paste
Salt to taste

1 small onion, finely chopped
2tbsp oil
2 tbsp tomato paste
1/2 cup water
4-5 tbsp cream
1 tsp Shan Chicken Tikka masala
Pinch of methi

1 Lachadaar paratha
Slices cucumber, pickled onions, coriander, crumbled paneer for garnish

Marinate the chicken with the masala, yoghurt, lemon juice, salt and ginger garlic pastes. Let it sit for atleast 30 mins to overnight.

In a pan on medium heat, sauté the onion until softened. Add the chicken and cook until half done. Add tomato paste and water cover and cook for 3-5 mins. Add cream, tikka masala and methi and cook for another two minutes.

Prepare your paratha. Add the butter chicken right in the center and garnish with cucumbers, pickled onions, coriander, and paneer.

Switch up your afternoon snack game with Taimour Shehzad Malik’ healthy charred corn chaat.

Recipe below

Charred corn chaat
- corn (1 whole)
- ⁠onion ( 1 small)
- ⁠garlic (2 cloves)
- ⁠cilantro (10g)
- ⁠basil (2g)
- ⁠Greek yogurt (2 tablespoon)
- ⁠feta cheese (30g)
- ⁠green onion (1tablespoon sliced)
- ⁠Shan chaat masala (1 tablespoon)
Char your corn over direct flame or over charcoal for a Smokey flavor.
Slice the kernels into a bowl. Small dice your onion, garlic, chopped cilantro and basil.
Add in your feta cheese and Greek yogurt (you can substitute mayonnaise with Greek yogurt for extra creaminess)
Sprinkle Shan chaat masala and mix everything till well combined
Serve in a bowl garnish with sliced green onion and a fresh basil leaves

Sab pakoray ek jaise nahi hote. These spinach fritters by Ayesha Khan Niazi are packed with veggies, fried in ghee, and paired with a refreshing green chutney.

Ingredients
5 potatoes
Bunch of spinach
1 pumpkin/kaddu shredded
½ cabbage grated
1 onion grated
1 capsicum, diced
1 egg
100g gram flour
Salt to taste
1 packet Shan Pakora/Bhajia mix
Recipe
Boil the potatoes and spinach until potatoes are fork tender.
Peel and mash the potatoes, separately blend the spinach and set aside.
Combine the gram flour, cabbage, pumpkin, capsicum, egg and Shan Pakora Bhajia Mix with the blended spinach and potatoes.
In a pan on medium heat, form into flat discs and fry the fritters in ghee till golden brown

Chutney
grind a handful of basil, mint, coriander seeds, salt and 2 green chillies in a mortar and pestle. Combine with 100g of yogurt

Mango Chicken Skewers
Ingredients:

4 ripe mangoes, peeled, chopped, and blended into a smooth pulp

1 cup yogurt

Shan Tikka Masala (to taste)

Chicken (boneless breast or thigh), cut into bite-sized pieces

Honey

Spring onions & okra, cut for skewers

How to make it:

Take 2 tbsp of your blended mango pulp and mix it with 1 cup yogurt and Shan Tikka Masala. Toss in your chicken and let it marinate for 30–60 minutes.

In a separate bowl, toss the okra and cut spring onions in a bit of oil and tikka masala.

Take the remaining mango pulp, add a dash more tikka masala and a touch of honey, then reduce it in a skillet over medium heat until thick, glossy, and sticky.

Thread your skewers, alternating spring onion, okra, and marinated chicken until full.

Grill on high heat for 2.5 minutes per side. Make sure the okra makes direct contact with the grill for that perfect slight char.

Brush generously with the warm mango glaze right at the end, serve hot, and enjoy.

Mango Sundal
1 Sindhri mango, diced
1-2 raw mango (kairi), diced
300g black chickpeas, soaked overnight and boiled till tender
4 dried red chillis
1 tsp mustard seeds
2 tbsp cumin
1 tsp Shan Tez Lal Mirch powder
1 tsp Shan Chaat Masala
2-3 stems fresh curry leaves
1.5 tbsp grated coconut
1 tbsp oil, neutral, olive oil or coconut oil

Recipe
On low heat, add 1 tbsp of oil to toast the mustard seeds, cumin, red chillis. Then add chilli powder, curry leaves and finally chaat masala.
Turn up the heat and toss in black chickpeas, cook until they start to get crispy. Take off the heat, add coconut and chopped raw mango.
Leave to cool for a couple of hours or put in the fridge. Once cooled, add the fresh mango. Serve and enjoy

Fire up the grill. Chef shows us a smoky, sweet combo using Shan’s Fried Chops Masala with a fresh mango salsa.

Grilled chops with mango salsa
*mango salsa*
- mango (1 whole)
- ⁠onion (1 medium)
- ⁠cilantro (20g chopped)
- ⁠Shan chaat masala (2 tsp)
Cut the mangoes and onions into small dice along with chopped cilantro. Sprinkle in Shan chaat masala and Mix everything well
Grilled mutton chops
- mutton chops (250g)
- ⁠neutral oil (2tbsp)
- ⁠lemon juice (1 tbsp)
- ⁠Shan fried chops masala (3tbsp)
In a bowl add chops and add any neutral oil along with Shan fried chops masala. Mix everything well. Refrigerate for several hours before grilling so the chops are well marinated.
Grill the chops over charcoal
For plating
Lay down your salsa beneath the chops and sprinkle some cilantro on top. Serve with lemon wedges on the side
