It's been a long time Gateau-lovers! But here is a distillation of some of my pastry knowledge.

Sometimes we find Inspiration all around us, at other times our passions inspire us. Here we have the happy resolution of both! I have been obsessing over Raspberries these day and hence I present to you my Inspiration Box 1.2

"Ode to Raspberries"

It's for Friday the 26th of November. Each box will contain any 5 Desserts from the list below. The box is Rs 3000 each. These desserts are hand crafted with a lot of love, care and attention.

[ ] Pavlova with hints of lavender and honey with our hand crafted Raspberry Compote and Raspberry Gelèe with fresh Raspberries and Crème Chantilly.
[ ] Buttery Shortcrust Pastry filled with our hand crafted Raspberry Compote and Raspberry Mousse, fresh and freeze dried Raspberries and Crème Pâtisserie and a surprise insert of croustillant.
[ ] Spiral-into-Raspberry Cake
[ ] Raspberry Éclairs with a very dark Chocolate Glaze
[ ] Our signature Raspberry Choux au Craquelain
[ ] Raspberry & Chocolate Entrement with gold leaf
[ ] Hand Crafted Pure Raspberry Marshmallows with Sablé Breton dusted with Raspberry powder

Please be informed that the contents of the "Inspiration Box" are at the Baker's discretion and for this offer you will not be able to pick and choose.

Pick up is available from KDA or delivery to most areas for Rs 250

They will be ready for pick up anytime after 3pm or delivery after 6pm on Friday.

Madeleines are so ingrained in French culture and daily life that they were chosen to represent France on Europe Day in 2006. They are often eaten hot in the French markets with a coffee in the morning, or at the 4pm goûter, the French equivalent of the British afternoon tea.

A Brief History of the Madeleines

Proust said everyone has their own ‘madeleine memory’

In the 1920s, French writer Marcel Proust wrote about madeleines in his autobiographical novel, À la Recherche du Temps Perdu (Remembrance of Things Past). Proust wrote about how he ate a madeleine dipped in tea and memories of his childhood came flooding back. The taste and smell reminded him unconsciously of his youth. The implication was that everyone has their own madeleine memory; you smell or taste something in the present and memories of the past come to life again. These memoires de Proust are now a key part of French culture.

Louis XV made madeleines famous at Versaille

The story is that King Louis XV first tasted madeleines on a visit to Lorraine and was very much smitten. He gave them to his wife, Marie, who in turn, introduced them to the French court. They took off, as the saying goes, like hot cakes!
