Healthy, quick and great for lunch, dinner or potluck
TOMATO, BACON, POTATO & CHIVE QUICHE

Ingredients

- Short Crust Pastry about 250g - I used about 1 1/4 sheets of - 24cm x 23cm frozen shortcrust pastry
300 g potatoes thinly sliced (about 5mm)
- 6 slices Short Cut Bacon chopped
- 1 Roma Tomato diced
- 1/2 cup Shredded Cheese I use a 3 cheese combo mix
- 5 Eggs
- 1/2 cup Milk
- 2 tbsps Chives thinly sliced

Method

- Grease an approx 24cm - 25cm (9 - 10 inch) round loose-based fluted flan pan.
- Add sliced potatoes to a saucepan of boiling water and cook for 10 minutes. Darin water from saucepan.
- In a frying pan over medium high heat, add bacon and cook until browned.
- Pre-heat a fan forced oven to 200Β°C (390Β°F).
- Fit pastry sheets into base and side of fluted pan. Trim the edges of the pan. Note. one sheet will not be enough for the entire pan so make sure you push the joining sheets together to seal and cracks in the pastry. It needs to hold wet contents without leaking.
- Layer about half of the potato over the base of the pan, sprinkle about half the tomato, bacon, cheese and chives over the top. Repeat layering with the remainder of the contents.
In a separate bowl, add eggs, milk and chives and whisk together.
- Pour egg mixture into the pastry case.
- Place in oven and cook for about 25 - 30 minutes or until set.
- Remove from oven and serve with your favourite salad.

* Alternately cool and serve cold. Store in refrigerator.

Needing brunch ideas for your lazy days?

Ingredients:

- 3 large Bananas ripe bananas - the riper the better.
- 2 Eggs separated
- 1 tbsp Caster Sugar
- 2 tbsp Milk
- 2 tbsp Butter melted
- 1 cup Plain Flour
- 2 tsp Baking Powder
- 1/4 cup Pistachio Nuts shelled & chopped
- 1 large Banana sliced to garnish

Honey Syrup
- 1/2 cup Honey
- 25 ml Lemon Juice

Method

- In a large bowl add bananas and using a fork, mash bananas until pureed.
- Add egg yolks, caster sugar, milk & butter. Stir until fully combined.
- Add flour & baking powder and stir to mix through.
- In a separate bowl, add egg whites and using an electric mixer beat until fluffy and soft peaks form.
- Fold egg whites into banana mixture.
- Heat a non stick frying pan over low to medium heat.
- Spoon a 1/4 cup size of banana mixture into the pan and cook until mixture starts to bubble. Flip pancake and cook other side until golden. Note: cook several pancakes together depending on the size of your pan.
- Remove pancakes from pan and keep warm until ready to serve.
- Serve pancakes as a stack of 2 or 3. Top with sliced banana and pistachio nuts and drizzle with honey & lemon syrup (per instructions below).

Honey Lemon Syrup
- In a small jug, add honey & lemon juice.
- Place in microwave for 30-60 seconds then stir to mix through

VEGAN? Now worries, we've got you covered too... VEGETABLE POTATO FRITTERS

Ingredients

- Potatoes
- Carrots
- Red lentils
- Garlic
- One small red onion
- All-purpose flour
- Smoked and regular paprika powder
- Majoram
- Salt and pepper

Method

- Cook the red lentils according to the instructions on the package. Peel and grate the potatoes and the carrot.
- In a large bowl, combine them with the cooked red lentils, the garlic, the onion, the flour, and the spices and stir well.
- Heat some oil in a large pan, and add about 1 1/2 heaped tablespoons for each fritter. Cook them on medium heat in a son-sticky pan for three to four minutes on each side.
- Alternatively, you can also make them in the oven for an oil-free version (about 20 minutes, flipping halfway).
For the vegan sriracha mayonnaise, combine all ingredients and stir well.
Serve the fritters with a green salad and the sriracha mayonnaise. Enjoy!

FOR THE SRIRACHA MAYO:

- 3 tablespoons vegan mayonnaise
- 1 teaspoon tomato paste
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika powder
- salt
- black pepper, to taste
- sriracha sauce, to taste

Ingredients

8 eggs
1 pound pork sausage (jimmy dean)
1 1/2 cups whole milk or heavy cream
1 package 30 oz bag frozen shredded hash browns (thawed out)
2 cups cheddar cheese
1 1/2 tsp salt
1 tsp black pepper
1/4 tsp garlic powder

Method

- Preheat oven to 375 and spray 9 x 13 pan with non stick cooking spray.
- Brown pork sausage (or cook your meat if you use a different kind) in skillet, over medium heat, breaking into small pieces. Drain grease and set aside.
- Whisk eggs, heavy cream and all spices together.
- Layer ingredients in a casserole dish. Start with adding your thawed hash browns, precooked sausage, layer of cheese, and then pour on whisked egg mixture.
- Cover with foil.
- Bake for 40 minutes, remove foil, and then bake for another 20.
- Serve your Sausage Hashbrown Breakfast Casserole with Franks Hot Sauce or Chunky Salsa

Can't find that smoko recipe? Try these deliciously easy LEMONADE SCONES

Ingredients

3 cups Self-Raising Flour
1 cup Thickened Cream
1 cup Lemonade Refrigerated

Method

- Pre-heat a fan forced oven to 200Β°C (390Β°F).
- Line a baking tray with baking paper and set aside.
- Sift flour into a large mixing bowl. Make a well in the centre.
- Add thickened cream and lemonade and mix to combine. I find it easiest to use a round bladed knife to mix the dough, particularly as it gets stickier.
- Lightly flour a flat surface or board and tip out dough onto surface.
- Gently knead for about 1 minutes, then shape into a rectangle about 2.5 - 3cms (about 1 inch) thick.
- Using a knife cut into about 12 square/rectangle pieces and lay on baking tray. Keep each piece separated by about 2cm to allow for expansion when it cooks.
- Bake for about 18-20 minutes or until golden brown.
- Serve warm or allow to cool on a wire rack.
- Serve with jam and whipped cream (see instructions below)
- Store in an airtight container

Whipped Cream
- In a medium sized bowl add thickened cream and beat using an electric mixer.
- After about 2-3 minutes as cream stars to thick, add caster sugar and continue beating until cream thickens and peaks form.
- Keep refrigerated when not being used.
