We’re diving into the science of popular sweeteners to help you make informed choices for your
health.

🍬Sugar – the classic energy source.
🍬Erythritol – a polyol found in fruits, has a glycemic index of 0.
🍬Honey – more than just sweetness, it contains trace antioxidants and antimicrobials.
🍬Xylitol – sweet as sugar but has a much slower blood sugar response.

Knowledge is power when it comes to your diet. Stay informed and choose what works best for
your body!

Why do some onions turn beautifully golden while others stay pale? 🧅

The answer is what happens under the lid.

In our experiment, one pan was covered while the other was left uncovered. The covered onions softened but stayed pale, while the uncovered onions browned beautifully.

Why? The lid traps steam, keeping the temperature lower and slowing down the Maillard reaction. Without the lid, moisture can escape and the surface gets hot enough for browning to occur.

An oversalted dish isn’t necessarily ruined – its overall chemical profile is just incredibly unbalanced. While you can sometimes physically dilute the concentration by adding more stock, that’s not always practical.

This is where the real food science magic happens: sensory trickery. 👅

By strategically introducing other powerful signals, like acid or sweetness, you create intense competition for your taste receptors.

Your brain, busy processing these new signals, perceives a more complex, balanced flavor, effectively masking the overwhelming saltiness.
