How to get a perfect circle pizza + My go to sauce prep

📝 Key Takeaways & Tips
Sauce Prep: Use high-quality canned Italian tomatoes (Strianese, Rega, or Rosso Gargano). Add salt and extra virgin olive oil, then crush by hand for the ideal texture. You can also use a food processor, but avoid a blender—it will crush the seeds and make your sauce bitter (a food processor won't break the seeds).

Dusting Flour: Swap regular flour for Semola Rimaccinata (double-milled durum wheat). It glides easily, prevents sticking, and won't burn in a high-heat oven.

Extraction:

Generously coat the edges and neighboring dough balls with semolina. When sliding the scraper under the dough, it naturally pushes the ball against the walls of the box or adjacent balls—without semolina, it will stick and lose its shape.

Cover the entire top with semolina so your hand won't stick when lifting from above.

Work plenty of semolina underneath—a few gentle scoops help it slide off effortlessly. Protecting the initial round shape during extraction is the secret to a perfectly round pizza!

(Note: As you gain experience, you can gradually reduce the amount of semolina used.)

Shaping & Stretching:

Drop the dough directly onto a generous bed/pile of semolina and shape it right on top. This eliminates sticking, and any excess semolina falls off naturally when you lift and stretch with your knuckles.

Push air outward from the center, leaving a 1 cm border for the cornicione. Stretch gently using your knuckles to reach your target size.

Use a curved peel to give the dough its final shape adjustment and guarantee a perfect circle before topping.

Smooth Launching:

If you followed the prep steps, your dough won't be sticky, so there's no need to rush—take it smooth and slow.

Avoid vertical jerks; use strictly horizontal front-to-back motions. Once the edge hits the stone, it locks in place, allowing you to slide the peel out smoothly.

44h cold ferment + truffle + smoked salmon = pure perfection

This one hit a legit 10/10. Here’s the breakdown:

• Dough: Direct method, Caputo Cuoco flour, 65% hydration, 44-hour cold fermentation.

• Base: Creamy ricotta truffle cream, mozzarella, red onion & a drizzle of olive oil.

• Bake: 90 seconds at 430°C in the Macte Ovens Voyager Smart.

• Post-Bake Toppings: Premium smoked salmon, fresh lemon zest, fresh basil & a final drizzle of EVOO.

The contrast between the warm, earthy truffle base and the cold, bright smoked salmon with lemon zest is insane.

The pizza I made yesterday.
It was incredibly good.
I used chorizo, red onion, yellow bell pepper, and tomato sauce. After baking, I topped it with fresh arugula (rocket), shaved Parmigiano Reggiano and EVOO

My recipe and process:

For 2 dough balls of 265g each at 66% hydration:

• 314g flour
• 207g water
• 8g salt
• 0.27g dry yeast

44 hours of bulk fermentation, then I divided and balled the dough, followed by a 4-hour proof at room temperature before baking.

Baked in the Macte Ovens Voyager Smart at 450°C for 90 seconds.

Semolina is not all the same.

Many pizza makers use semolina for stretching and launching dough, but the texture of the semolina can make a noticeable difference.

In this jar, the semolina on top is a typical supermarket "extra-fine" semolina. The semolina at the bottom is Semola Rimacinata di Grano Duro, a durum wheat semolina that has been milled a second time to achieve a much finer texture.

Why does it matter?

Better Dough Handling:
Because rimacinata is finer, it tends to adhere more evenly to hydrated dough. This can make stretching and handling feel smoother, especially with Neapolitan-style doughs. Coarser semolina often stays more loosely on the work surface and may not coat the dough as uniformly.

Cleaner Launches and Baking:
A heavy layer of coarse semolina can accumulate on the peel and eventually on the oven floor, where it may burn quickly at pizza oven temperatures. Rimacinata generally requires a lighter dusting and tends to shake off more easily, helping reduce excess burnt flour during baking.

Crust Texture:
The small amount of rimacinata that remains on the dough can contribute to a delicate crispness on the bottom of the crust. Coarser semolina may create a more pronounced texture, which some pizza makers enjoy and others prefer to avoid.

My Take:
For Neapolitan and high-hydration doughs, rimacinata is my preferred choice. It offers better control during stretching, uses less flour overall, and helps keep the bake cleaner. Regular semolina still works and has its place, but once you've worked with a good rimacinata, it's easy to understand why so many pizzaioli rely on it.
