I remade my Strawberry Cobbler with Lemon Biscuit topping using a slightly different method this time, and honestly, I may never go back.
Instead of dropping the biscuit dough directly over the fruit, I shaped it, cut it into squares, and chilled the pieces before baking. The result was taller, more layered biscuits with crisp edges and soft centers, while still keeping that rustic cobbler feel.
It also solved one of the best parts of cobbler etiquette, now everyone gets their own biscuit.
The strawberries bake down into something jammy and bright, while the lemon-scented biscuits soak up just enough of the fruit underneath.
A small technique shift, but one that completely changed the final texture and look of the cobbler.
