✨ Fennel & Orange Salad – a taste of the season ✨
Right now here in Portugal, fennel is crisp, oranges are sweet and juicy, and everything feels in perfect harmony 🍊🌿
This simple salad brings it all together – with a special touch: salt-cured olives from my own garden.
Fresh, vibrant, and deeply rooted in the moment.
🥗 Recipe (serves 2–3):
• 2 fennel bulbs
• 2 oranges
• a handful of black olives
• 3 tbsp olive oil
• 1–2 tbsp lime or lemon juice
• salt & freshly ground pepper
• fresh parsley or mint
👩🍳 Preparation:
Thinly - thinly is important - slice the fennel (remove the core) and gently massage it with a pinch of salt to soften.
Peel and segment the oranges, catching the juice.
Combine fennel, orange segments, and olives.
Whisk olive oil, lime/lemon juice, and a bit of orange juice into a dressing, season to taste, and toss everything together.
Finish with the green of the fennel or fresh herbs ✨
