In the world of fine dining, there is often a choice to be made between tradition and innovation.

There is the school of strict preservation, where history is guarded, and the school of avant-garde experimentation, where rules are broken. I have never believed in choosing one over the other. My name is Fabrice Rosso, and I am a student of tension. I stand at the intersection where the rigorous precision of French haute cuisine meets the vibrant, unchartered territory of global flavors. My phil

osophy is built on a dual identity: the Alchemist, who possesses the scientific technique to deconstruct an ingredient to its molecular truth, and the Curious Soul, driven by a multicultural heritage to tell a new story with it. As the Executive Chef of IDAM by Alain Ducasse in Doha, and the recipient of a MICHELIN Star in 2024, my mission is not just to feed, but to provoke a moment of discovery. To take the terroir of the Middle East and view it through the lens of a French master, creating a cuisine that is both technically flawless and emotionally resonant.

Plated with horseradish, fermented green pepper, pickled fennel, micro coriander and arugula flower.

No eggs in this mayonnaise. Just fish collagen and seaweed.

Building the two components that carry this dish.
A mayo made from fish collagen and seaweed extraction, emulsified with egg white and grapeseed oil.
The rice, cooled with blueberry vinegar made in house, shaped by hand, finished with fresh ginger.

Sushi rice cooked in red wine, not vinegar.
New on the menu at IDAM: sardine nigiri, fish collagen and teriyaki sauce, French technique meeting Japanese form.
The base is koji rice, cooked slowly with water, red wine and kaffir lime leaves.
The sardines are local, cut clean behind the head, b***d by hand, then scored with small incisions to tenderize the flesh before it meets the rice.

Two chefs. Two signatures. One island table.

For one evening at , Chef Davide Allievi and I brought Italy and the French Riviera into the same kitchen.
We did not divide the menu or simply take turns. We listened, responded and composed it together.

Marinated king crab with elderflower, avocado and coral opened the journey. Basil pesto ravioli with taccole and Parmesan carried the Italian voice. Rack of lamb with hibiscus, kohlrabi and cooking jus brought us toward the land, before burnt chocolate, strawberry, lime and cardamom changed the final tempo.
Different references. One shared rhythm.
What began with two signatures became one experience, carried by an entire kitchen and completed at the table.

Can a cuisine cross an ocean and remain itself?

At , I arrived with the language I know best: the Mediterranean—its clarity, generosity and respect for the product.

But I did not come to reproduce the Riviera in another latitude. The Indian Ocean brought a different light, rhythm and horizon. Seafood became the natural bridge between where I came from and where I was cooking.

The techniques remained familiar. The flavours remained mine. Yet the experience could only belong to this island.

For one evening, the Riviera faced the Indian Ocean.

My cuisine remained itself.
The memory belonged to Hadahaa.

I came to the Maldives with a menu. The island changed the way I told it...

My cooking still carried the Mediterranean and the French Riviera, but everything felt different here—the light, the sea, the silence and the pace.

This was more than taking a dinner to another destination. It was discovering how the same culinary language could feel completely new in the Maldives.

Slowly cooked milk-fed lamb, hibiscus, kohlrabi, cooking jus.

Lamb roasted and marinated with hibiscus. Kohlrabi natural and as glazed leaves. Lamb garum. Cooking jus with hibiscus ketchup.

Patience, precision and restraint.
The dish will be available in September.

XO Lobster.

A new preparation developed for the upcoming menu at IDAM by Alain Ducasse in Doha, where it will become part of a new lobster dish.

Built around intensity, reduction and aromatic depth, the base begins with dry lobster, tamarind paste and house lobster garum, creating a concentrated marine foundation with acidity and umami.

Galangal, lemongrass, shallots, garlic and ginger are gently sweated to build the aromatic structure, before the sauce is reduced and finished with ginger juice, cold lobster butter and kaffir lime leaves.

The result is a sauce shaped by contrast: shellfish intensity, fermented depth, citrus brightness and the precision of time.

A new layer in the evolution of the lobster dish, soon to appear on the menu.
