Chicken Kabsa Rice
Ingredients:
1 kg chicken (thigh pieces), 1 kg basmati rice, 1 cup oil, 2 medium onions (finely chopped), 1 tbsp ginger paste, 1 tbsp garlic paste, 2 large tomatoes (puréed), 2 tbsp tomato paste, 1 chicken stock cube, 3 dry lemons (Loomi), 1 whole garlic bulb (optional).
Whole Spices:
2 bay leaves, 1 large cinnamon stick, 2 green cardamoms, 3 cloves, 4–5 black peppercorns (optional).
Powder Spices:
1 tbsp salt, 1½ tbsp coriander powder, ½ tsp turmeric, 1½ tsp paprika, 1 tsp black pepper powder, 2 tbsp Special Kabsa Masala.
Chicken Coating:
Oil, tandoori masala and lemon juice — as needed.
Special Kabsa Masala:
1 tbsp coriander seeds, 1 tbsp cumin seeds, 2 black peppercorns, 3 cloves, ½ cinnamon stick, 1 black cardamom, 3 green cardamoms, 1 dry lemon (Loomi). Lightly roast, cool and grind into a fine powder.
Method:
Fry onions in oil until dark brown. Add ginger, garlic and whole spices, then add chicken and fry. Add tomato purée, tomato paste and powder spices. Add chicken stock cube, water and Loomi. Bring to a boil and cook for 10 minutes, then remove the chicken.
Mix oil, tandoori masala and lemon juice and coat the chicken. Bake at 200°C for 20 minutes or cook on a tawa.
Add washed rice to the yakhni with the optional whole garlic bulb. Add double the quantity of water for soft, juicy and slightly sticky rice. When the water has almost dried, close the pressure cooker and cook on low-medium heat for 2 whistles, or cook on dum for 20–25 minutes. Place the baked chicken on top and serve.
Quick Chutney: Blend 2 tomatoes, lemon juice, 1½ tbsp fresh coriander, a little black pepper, ¾ tsp paprika, ¾ tsp vinegar, 1 tsp garlic, salt to taste and 1 tbsp olive oil until smooth.
