Classic American Tomahawk Steak Recipe (Reverse Sear Method)
The Reverse Sear method is the standard for thick-cut steaks in top American steakhouses, ensuring an even medium-rare center with a deep, caramelized crust.
Prep Time: 15 mins | Cook Time: 45 mins | Servings: 2–3
Ingredients:
1 Tomahawk Ribeye Steak (approx. 2 to 2.5 inches thick, ~3 lbs)
2 tbsp Coarse Kosher Salt
1 tbsp Freshly Cracked Black Pepper
1 tbsp Garlic Powder (optional)
3 tbsp Unsalted Butter
3 cloves Fresh Garlic (smashed)
2-3 sprigs Fresh Rosemary & Thyme
2 tbsp High-smoke point oil (Avocado or Canola oil)
Instructions:
Dry Brine (Crucial Step):
Pat the steak completely dry with paper towels. Season generously on all sides with kosher salt, black pepper, and garlic powder. Place it on a wire rack over a baking sheet and refrigerate uncovered for 12–24 hours (or at least 1 hour at room temperature before cooking).
Low & Slow Roast:
Preheat your oven or smoker to 225°F (107°C). Place the steak inside and cook until the internal temperature reaches 115°F (46°C) for medium-rare (about 35–45 minutes). Use a digital meat thermometer inserted into the thickest part.
High-Heat Sear:
Heat a heavy cast-iron skillet or high-heat grill until smoking hot. Add 2 tbsp of high-smoke point oil.
Baste with Butter & Herbs:
Place the steak in the hot skillet. Sear each side for about 1 to 2 minutes to build a rich, golden-brown crust. During the last minute, add the butter, smashed garlic cloves, and fresh rosemary/thyme sprigs. Tilt the pan and spoon the melted herb butter continuously over the steak.
Rest & Serve:
Remove the steak from the heat and transfer it to a wooden cutting board. Let it rest for 10 minutes so the juices redistribute throughout the meat.
Slice & Enjoy:
Carve the meat away from the bone, slice against the grain into thick ribbons, and sprinkle with flaked sea salt.
